Hi Hannah. It&#039;s not the same, no but the best thing is that it&#039;s much easier to find than potato starch. Look for the powdered stuff you can use to make instant mashed potatoes. If you can only find the flakes, blend them in your food processor until fine. I promise you won&#039;t taste it in the final cookie and they&#039;ll have a perfect soft and chewy texture! It helps to bind the dough in this case. However, I am confident that if you used 30g smooth fresh mashed potato it will work just as well.
