In reply to Preksha. Chickpea water, also known as aquafaba acts as an egg replacer in this particular cake recipe. Once baked, you won’t be able to taste/smell it.

Why the use of Chickpea water? Can i replace this with anything else instead? Never in my life made a cake and i want to try but also need to understand the reason for odd ingredients like Chickpea water. Thank you

Lovely blog post. I too knew my grandparents. I met them twice in my life, both times when we could afford to go to India. I too feel cheated moreso for the effect it’s had on my parents. I love if that’s the right word that you have conversations with them in your head. Must feel reassuring.

Sanjana – It looks great. I’m going to try it tonight. It looks like you have added the milk powder to the flour mixture AND the chickpea juice. I assume you mix it with the chickpea juice and do not add it to the flour mixture…
