<h2 class="wp-block-heading">What are Curry Puffs?</h2>



<p>Curry Puffs are a pastry-wrapped snack popular across Asia. Many communities make their own versions, from Singapore to Thailand, but Curry Puffs are thought to have Malaysian roots.</p>



<p>Malay Curry Puffs are particularly beautiful with a spiral &#8216;shell&#8217; that employs a technique similar to the one used to make Italian Sfogliatella.</p>

<p>As much as I&#8217;d love to do a tutorial on Malay Spiral Curry Puffs at some point, I have promised you some quick and easy plant-based dishes so here&#8217;s a delicious Vegan Curry Puff recipe you can make in a jiffy!</p>



<h2 class="wp-block-heading">The vegetable filling</h2>



<p>I’ve never met a curry puff I didn’t like. These two bite-sized morsels are so easy to prepare. Raid the fridge and use up any veggies you like.</p>

<h3 class="wp-block-heading">Vegetables I use for Vegan Curry Puffs</h3>



<ul><li>Carrots</li><li>Peas</li><li>Sweetcorn</li><li>Edamame</li><li>Potatoes</li><li>Onions</li></ul>



<p>Pre-cook all the veggies except for the onion until they’re tender. I microwave my potatoes and steam the carrots, peas, sweetcorn and edamame.</p>



<h2 class="wp-block-heading">The curry powder</h2>

<p>Indeed, one of the most important ingredients in Curry Puffs is the curry powder itself. I use <strong><a href="https://bart.co.uk/products/medium-curry-powder">this medium Indian-style curry powder.</a></strong> It&#8217;s the same one I like to use for dishes like Singapore Noodles and Katsu Curry.</p>



<p>Malaysian, Thai or even roasted Sri Lankan curry powder will all taste delicious, however.</p>



<p>We need to use a lot of curry powder in this recipe so whatever you choose, make sure it&#8217;s one you like the flavour of.</p>



<h2 class="wp-block-heading">The pastry</h2>



<p>I cheat and use shop-bought puff pastry for the flaky outer casing. The multiple layers of puff pastry give the Curry Puffs their signature ‘puff’ without the laborious task of making your own pastry.</p>



<p>Keep the pastry in the fridge right up until you&#8217;re ready to fold the curry puffs.&nbsp;Cold pastry will ensure the folding process doesn&#8217;t end in a soft, greasy and misshapen doughsaster!</p>



<h2 class="wp-block-heading">The coconut milk wash or &#8220;glaze&#8221;</h2>

<p>Before you bake, brush the Curry Puffs with a liberal slick of coconut milk mixed with turmeric for a gorgeous egg-free ‘egg wash’.</p>



<p>Since we’re using some coconut milk in the filling, it makes sense to echo the flavours on the outside, whilst on our way to golden perfection.</p>

<p>If you&#8217;d like your curry puffs to have a little shine, add 1 tsp agave to the mixture (optional).</p>



<h2 class="wp-block-heading">How to fold Curry Puffs</h2>

<p>Firstly, this is much more fun when you have someone to help you! Be sure to keep your pastry in the fridge while you work if your kitchen is particularly warm.</p>



<p>Take a square of pastry in your palm so it&#8217;s facing you in a diamond shape. Place around 1 1/2 tsp of the filling in the centre.</p>



<p>Bring the bottom point to the top to form a triangle and pinch to seal. Continue to pinch the open seams closed, ensuring you squeeze any air out as you seal.</p>



<p>At this point you can either pleat the edges or simply press with a fork to create a pattern around the edge. I love a twisty seam.</p>

<p>Starting from one side, pinch the pastry at the outer edge between your thumb and index finger.</p>



<p>Try not to press too hard or all the fat will leak out of the pastry (this is why it&#8217;s important the pastry is cold). After your first pinch, twist the pastry inwards and pinch again to keep in place.</p>



<p>Repeat all the way around the pastry and nip off any excess pastry when you get to the end.</p>

<h2 class="wp-block-heading">Can I use this recipe to make jumbo Vegan Curry Puffs?</h2>



<p>Yes. Cut your pastry into 6 large squares rather than 12 squares per pastry sheet as directed in the recipe. Note that jumbo Curry Puffs will take 10-12 minutes longer to bake.</p>

<p>Yes. You can prepare either the filling in advance or even assemble them entirely.</p>

<p>Prepare the curry puffs as directed in the recipe, stopping before you brush on the coconut milk wash. Place on a tray and cover with cling film before refrigerating for up to 48 hours. Cook as per recipe.</p>

<p>Prepare the curry puffs as directed in the recipe, stopping before you brush on the coconut milk wash. Place on a tray and cover with cling film before freezing flat until solid.</p>



<p>Once completely frozen, you can place the curry puffs in a freezer-safe container or bag (up to 3 months). Do not defrost: Cook straight from frozen.</p>

Carefully unroll the first roll of pastry and set it on a flat work surface. Place around 1 1/2 tsp of the filling in the centre. Bring the bottom point to the top to form a triangle and pinch to seal. Continue to pinch the open seams closed, ensuring you squeeze any air out as you seal.</span></div></li><li id="wprm-recipe-23359-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">At this point you can either pleat the edges or simply press with a fork to create a pattern around the edge. I love a twisty seam. Starting from one side, pinch the pastry at the outer edge between your thumb and index finger. Try not to press too hard or all the fat will leak out of the pastry (this is why it&#039;s important the pastry is cold). After your first pinch, twist the pastry inwards and pinch again to keep in place. Repeat all the way around the pastry and nip off any excess pastry when you get to the end. <p>My name is Sanjana and I have a Crispy Popcorn Bhindi Bites addiction. &#8220;What are they?&#8221;, I hear you ask.</p>



<p>Crunchy spiced nuggets of okra coated in breadcrumbs and coconut, served with a hot and spicy vegan mayo, that&#8217;s what. A sort of riff on coconut shrimp, but 100% plant based.</p>

<p>In this recipe, I put the natural stickiness of okra to work. Magic because this is the stickiness of okra is one of the things people dislike about these firm green pods.</p>



<h2 class="wp-block-heading">Ways to cook okra (bhindi)</h2>



<p>Wait, do you call them Bhindi, okra, lady fingers or something else? I refer to them as bhindi or bhinda and often use all three terms interchangeably.</p>



<p>Ultimately, I adore them in any way, shape or form. Namely in dry curries. I, like many Indian families, often pair them with potatoes, onions and/or paneer.</p>

<h2 class="wp-block-heading">Max out the slime!</h2>



<p>Okra slime is one of the things we usually try to diminish in Indian dishes. Lemon juice and vinegar can suppress the stickiness of bhindi.</p>

<p>But this recipe is an exception! Here we welcome the stickiness in lieu of eggs. Indeed, okra slime will create the most <em>perfect</em> &#8220;glue&#8221; to help crunchy panko breadcrumbs and coconut stick to our popcorn bhindi.</p>



<p>Fry or bake for a delicious, golden snack. Once you start, you won&#8217;t be able to stop eating. Dip them in my Atomic Red Chilli Mayo for addictive heat!</p>

<h2 class="wp-block-heading">How to prepare okra</h2>



<p>Always wash and thoroughly dry okra before you begin your recipe. Be careful as the stems can have tiny, hair-like spikes on them.</p>



<p>If you accidentally brush these with your fingers they can sting and itch.</p>



<p>Be sure to dry them in a clean tea towel. Any moisture can make the okra extra sticky and while that&#8217;s not a huge deal for this recipe, it will make them more difficult to slice.</p>



<h2 class="wp-block-heading">How to make Crispy Popcorn Bhindi Bites</h2>



<div class="schema-how-to wp-block-yoast-how-to-block"><p class="schema-how-to-total-time"><span class="schema-how-to-duration-time-text">Time needed:&nbsp;</span>55 minutes</p><p class="schema-how-to-description">Follow these steps for perfect crispy Popcorn Bhindi!</p> <ol class="schema-how-to-steps"><li class="schema-how-to-step" id="how-to-step-1594847952828"><strong class="schema-how-to-step-name">Prepare the okra</strong> <p class="schema-how-to-step-text">Wash and dry the bhindi throughly. Remove the stems and cut the bhindi in rings.</p> </li><li class="schema-how-to-step" id="how-to-step-1594848022195"><strong class="schema-how-to-step-name">Make the wet mix</strong> <p class="schema-how-to-step-text">Combine all the ingredients for the wet mixture. <h2 class="wp-block-heading">Some things to remember when cooking Crispy Popcorn Bhindi Bites</h2>



<ul><li>Be careful not to cook the Popcorn Bhindi at too high a temperature or they will brown too quickly on the outside and the okra itself will remain raw inside.</li><li>How to freeze the Bhindi for cooking later: Once all the okra nuggets have been coated in a double layer of breadcrumbs, freeze the entire tray, with all the nuggets in a single layer. Once completely frozen, pack into freezer-safe bags or containers to cook later.</li><li>To cook the Bhindi from frozen: Deep fry or bake according to recipe instructions. Add 5 minutes onto bake time for frozen Popcorn Bhindi and 90 seconds on to fry time.</li><li>I don&#8217;t recommend freezing cooked Popcorn Bhindi.</li></ul>

<li>To cook the Bhindi from frozen: Deep fry or bake according to recipe instructions. Add 5 minutes onto bake time for frozen Popcorn Bhindi and 90 seconds on to fry time.</li>
<li>I don&#8217;t recommend freezing cooked Popcorn Bhindi.</li>

<h2 class="wp-block-heading">What is Tangzhong?</h2>



<p>The process of making Vegan Pandan Hokkaido Milk Bread begins with a method called <strong>tangzhong </strong>. This is to first cook a small amount of the flour (my recipe calls for <strong>10%</strong>) with water to create a paste that is similar to a roux in French cookery. Tangzhong is a technique which has been used in Asian baking, namely in Japanese and Chinese cuisines for centuries.</p>



<p>The method of heating flour with water activates the starch in the flour and creates a perfectly-hydrated dough filled with tiny air bubbles. This gives the final loaf a soft, springy texture. Honestly, the tangzhong dough is extremely sticky, due to the extra moisture so it’s a challenge to knead by hand. Yet, my stand mixer is very loyal and does all the hard kneading job for me.</p>



<p>Making this vegan milk bread really is a magical process as well as a cathartic baking project. Kids will also love helping rolling up the dough up into spirals, too. Bodhi was mainly interested in the squishing part&#8230; Can you tell?</p>

<h2 class="wp-block-heading">What is Pandan?</h2>



<p>In South Asia and Southeast Asia, <a href="https://en.wikipedia.org/wiki/Pandan" target="_blank" rel="noreferrer noopener" aria-label="pandan (opens in a new tab)">pandan</a> is as common a flavoring as vanilla is in the West. The flavour is sweet and floral like vanilla&nbsp;but with a subtle, marshmallowy and grassy dimension which is difficult to describe to the uninitiated. It&#8217;s widely used in savoury cooking as well as baking and sweets. Pandan paste is easy to find in Asian supermarkets and a little goes a long way. If you&#8217;re lucky enough to find fresh pandan leaves, you can make your own pandan juice. I reduce it down to a pulp with water and strain. Also, fresh leaves are also amazing when added to a pot of steaming rice.</p>



<h2 class="wp-block-heading">More Flavour Ideas for Vegan Hokkaido Milk Bread</h2>



<ul><li>Omit the pandan extract for a <strong>plain vegan Hokkaido</strong> <strong>milk loaf </strong>that&#8217;s slightly sweet and perfect for PB&amp;J sandwiches and French Toast.</li><li>Add 1 tbsp (yes 1 tbsp) of <strong>vanilla extract</strong> to give your bread a beautiful bakery flavour.</li><li>Grate in the zest of <strong>2 large unwaxed lemons</strong> if you like your bakes to have a citrus hit.</li><li>You could also spread the inside of the rolls with your favourite <strong>chocolate spread, vegan citrus curd or jam</strong> for that sweet roll finish.</li></ul>

<h2 class="wp-block-heading">Vegan &#8220;Eggwash&#8221;</h2>



<p>My ultra-shiny egg-free glaze comes from a simple mixture of agave, coconut milk and turmeric. No yolks required! The sweetness from the agave helps the top caramelise. Bonus! The turmeric adds a hint of yellow for that eggwash feel. It&#8217;s perfect for baking. When glazing savoury pies and pastries, I omit the agave and simply use any plant milk + turmeric.</p>

Transfer to a bowl and cover with cling film.  Allow to sit until the starter gets to room temperature.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Making the dough:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-20337-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add the coconut milk, sugar and pandan paste to a saucepan and heat over a low heat until the sugar has dissolved. Allow to cool at room temperature to about 38°C/100°F or just warm. Now add the yeast and stir. Set aside for 10 minutes until frothy.</span></div></li><li id="wprm-recipe-20337-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In the bowl of a stand mixer, whisk together the bread flour, coconut milk powder, and salt.  Once mixed, add in the warm milk and tangzhong starter. Whisk until just combined. Switch to the dough hook attachment and knead the dough at medium-high speed for 10 minutes.</span></div></li><li id="wprm-recipe-20337-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">With the mixer still running, add the soft vegan butter, 1 tablespoon at a time until fully incorporated. It will feel like a lot of butter but keep it going &#8211; it will be absorbed into the dough the longer it is kneaded. Turn the speed up to high and beat for a final 5 minutes.  Transfer the dough to a lightly oiled bowl and cover with cling film. Allow to sit for 1 hour, or until the dough has doubled in size.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Shaping the dough:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-20337-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Knock the air out of the risen dough and knead briefly to remove any large air pockets. Divide the dough into 14 equal parts (about 90g each). Keep the cut dough under cling film to prevent it from drying out or forming an unwanted skin.</span></div></li><li id="wprm-recipe-20337-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Take one portion of the dough and roll into a long oblong, about 5cm (2&quot;) wide and 10cm (4&quot;) in length. Starting from the end closest to you, roll the dough into a log. Repeat with remaining dough.</span></div></li><li id="wprm-recipe-20337-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place the first seven logs seam-side up in a well-greased loaf tin (size: 1800g/4lb) for the first layer and for the second layer, place the logs seam-side down. Cover the loaf tin with cling film and allow to rest in a warm place for 30 minutes, until the dough has doubled in volume.</span></div></li><li id="wprm-recipe-20337-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Preheat the oven to 175C/350F</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For the vegan “eggwash&quot;:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-20337-step-3-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Combine all the ingredients for the vegan &quot;eggwash&quot;. Gently brush on top of the risen dough.</span></div></li><li id="wprm-recipe-20337-step-3-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Bake in the preheated oven until the top of the bread is a nice golden brown. If the bread top colours too quickly, place a foil tent over it to prevent it from burning.</span></div></li><li id="wprm-recipe-20337-step-3-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Let the bread cool in the loaf pan for 5 minutes before unmolding (wearing oven gloves). the loaf should slip out easily once inverted. Allow the loaf to cool to room temperature on a wire rack.</span></div></li></ul></div></div>
