<p>A vegan take on Jam Roly Poly, the classic British steamed pudding I loved so much at school. Serve with custard for a warm, nostalgic dessert you&#8217;ll crave often. So delicious!</p>

<h2 class="wp-block-heading">What is Suet?</h2>



<p>Suet in the traditional sense is a raw animal-derived fat. It&#8217;s usually sourced from beef or mutton and has many cooking applications from pastry to dumplings. It is not the same as lard.</p>

<p>Since this recipe for Jam Roly Poly is vegan, it calls for vegetable-based suet. Vegetable suet is made from vegetable fats and tossed with wheat flour to keep the fat pellets separate.</p>



<p>The texture is wax pellet-like and soft when pressed between the fingers. Buy it from the supermarket and store in a cool, dry place. I like <strong><a href="https://www.atora.co.uk/" target="_blank" rel="noreferrer noopener">this brand of vegetable suet.</a></strong></p>

<h2 class="wp-block-heading">Jam Roly Poly without suet</h2>



<p>It&#8217;s entirely possible to make Jam Roly Poly without suet. The texture will however, be different if you use a hydrogenated fat (fat with water) such as vegan butter or spread.</p>



<p>Suet is a form of non-hydrogenated fat which produces a crumbly, soft pastry-like finish. Therefore, if you use vegan block with water listed in the ingredients, the finish will be more doughy.</p>



<p>For a vegan Jam Roly Poly without suet, <strong>virgin or refined (odourless) coconut oil</strong> is a better option than vegan block or butter.</p>

<h2 class="wp-block-heading">Step-by-step: How to make <strong>Vegan Jam Roly Poly</strong></h2>



<div class="schema-how-to wp-block-yoast-how-to-block"><p class="schema-how-to-total-time"><span class="schema-how-to-duration-time-text">Time needed:&nbsp;</span>1 hour</p><p class="schema-how-to-description"><strong>Vegan Jam Roly Poly recipe</strong></p> <ol class="schema-how-to-steps"><li class="schema-how-to-step" id="how-to-step-1614694207978"><strong class="schema-how-to-step-name">Pre-heat the oven</strong> <p class="schema-how-to-step-text">Pre-heat the oven to 180°C/350°F/gas mark 4.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694172666"><strong class="schema-how-to-step-name">Prepare the aluminium foil and baking parchment wrap</strong> <p class="schema-how-to-step-text">Lay a 50cm wide piece of foil on a work surface. Place a 30cm piece of baking parchment on top of the foil and grease it lightly with oil. Set this aside.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694058934"><strong class="schema-how-to-step-name">Mix the dry ingredients</strong> <p class="schema-how-to-step-text">In a bowl, mix together the flour, caster sugar, cardamom (optional), salt and vegetable suet.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694135726"><strong class="schema-how-to-step-name">Add the wet ingredients</strong> <p class="schema-how-to-step-text">Add the milk and mix to form a shaggy dough.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694151664"><strong class="schema-how-to-step-name">Knead briefly</strong> <p class="schema-how-to-step-text">Knead gently for 2-3 minutes until the dough is soft and slightly elastic.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694166340"><strong class="schema-how-to-step-name">Spread with jam</strong> <p class="schema-how-to-step-text">Spread the jam all over the surface of the dough, leaving a 1cm gap at the edges to prevent overspill.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694237750"><strong class="schema-how-to-step-name">Roll up</strong> <p class="schema-how-to-step-text">With the longest edge closest to you, begin to roll the dough into a log, like how you’d roll up a cinnamon bun.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694243589"><strong class="schema-how-to-step-name">Wrap</strong> <p class="schema-how-to-step-text">Carefully lift the roll and place it on the greased baking parchment, near the edge. Roll the log in the baking parchment/foil loosely. Increase the oven temperature to 200°C/400°F.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694251583"><strong class="schema-how-to-step-name">Brush and bake again</strong> <p class="schema-how-to-step-text">Stir together the agave and dairy-free milk. Unwrap the Roly Poly and brush the with the milk mixture. Sprinkle with Demerara sugar. Return the Roly Poly to the oven for 5 minutes until golden all over. Allow to cool for 10 minutes.</p> </li><li class="schema-how-to-step" id="how-to-step-1614694293198"><strong class="schema-how-to-step-name">Serve</strong> <p class="schema-how-to-step-text">Cut the Vegan Jam Roly Poly into thick slices and serve with hot custard.</p> </li></ol></div>

<p>Think cinnamon roll! Indeed, if you can make cinnamon rolls, this process will be a breeze. Due to the sticky and splodgy nature of jam, be sure to leave a border around it to avoid overspill.</p>



<h2 class="wp-block-heading">Why has my Jam Roly Poly cracked?</h2>



<p>It&#8217;s normal for Jam Roly Poly to crack a little while it cooks. The foil and baking parchment wrap should be left slightly loose so the pudding has room to expand.</p>

<p>Allow the cooked Vegan Jam Roly Poly to cool completely. Wrap it in cling film and then a layer of aluminium foil. Place into a freezer-safe bag or container and freeze for up to 3 months.</p>

										<content:encoded><![CDATA[<p>I have a soft spot for doughnuts. Doesn’t everyone? My allegiance lies with the pillowy, jam-filled variety with a light sugar coating. It has to be caster sugar as opposed to powdery icing sugar and the jam *must* be raspberry. It’s the <em>law.</em></p>
<p>The smell of fresh doughnuts frying is like nothing else. If they bottled it, I’d wear it as perfume, leaving a faint whiff of “funfair” trailing behind me everywhere I’d go. You’d smell me coming a mile away and know I’d been around hours after I’d gone. From a purely practical point of view (and not at all a gluttonous one), this would also make me a very hard person to kidnap. I should probably stop watching so many Netflix true crime shows.</p>

<p>My vegan doughnut dough has a stretchy-smooth quality, as well as a slight sweetness which I find hopelessly irresistible once fried. Despite being made up of flour, sugar and oil, each pillowy puff is lighter than air. A combination of almond milk, lemon, yeast and baking powder give them an ethereal weightlessness that you only get when you eat them hot, as soon as they’re made. I defy anyone to spot the lack of eggs and dairy in this recipe.</p>
<p>In my book, no variety of cakey baked doughnut comes close to the utterly fuzzy feeling you get from eating a yeasted, fried doughnut. It of course, involves hot oil and for you to set aside a bit of therapeutic baking time but there are moments you can break away to catch up on your favourite TV show, drink wine and/or have a power nap. The results are special and not at all cake like. The dough needs to be left to rise and this is when the magic happens. Keep it in a warm place like an airing cupboard or even in the oven with just the light left on inside.</p>
<p>Swap almond milk for soy milk or oat milk if you want to make a nut-free version of these doughnuts — both work beautifully. Over the years I’ve realised you can add most of the ingredients to the hot milk mixture with little to no compromise on results, which makes the dough-making process much easier. There’s no adding of butter in stages involved either. Reserve the salt and baking powder and add them to the flour mixture. Once the warm-ish milk hits the flour, all of those lovely raising agents join forces to work their magic as the gluten in the flour develops through the kneading process. You can use your hands to knead the dough if you have arms of steel and the stamina to do it for 25 minutes or so. I do not have such superpowers and my stand mixer is my friend.</p>
<p><strong>More ideas:</strong> You can switch the cardamom sugar for <strong>cinnamon sugar</strong> and fill these with your favourite thick <strong>vegan custard</strong> instead of jam. Or better yet, fill them with <strong>both jam <em>and</em> custard.</strong> I’ve done this before and I don’t want to say everyone liked me more that week, but they definitely did. <strong>Vegan lemon curd</strong> is also a noble choice of filling and it works particularly well with cardamom sugar. I have also successfully steeped my warm milk with <strong>saffron strands</strong> for a saffron flavoured doughnut and it was dreamy, like the best marriage of Indian mithai and a classic funfair doughnut. <div class="wprm-recipe-instructions-container wprm-recipe-20006-instructions-container wprm-block-text-normal" data-recipe="20006"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><ul class="wprm-recipe-instructions"><li id="wprm-recipe-20006-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place the flour, baking powder and salt in the bowl of a stand mixer fitted with a dough hook attachment.</div></li><li id="wprm-recipe-20006-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Next, add the milk, butter, sugar and vanilla to a saucepan and heat over a low heat until the butter has melted and the sugar has dissolved. Allow to cool at room temperature to about 38°C/100°F or just warm. Add the lemon juice and yeast and stir. Set aside for ten minutes.</span></div></li><li id="wprm-recipe-20006-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the milk mixture to the stand mixer and switch it on to slow. Once the mixture has come together, knead on medium-high speed for 15 minutes. Keep an eye on your mixer to ensure it doesn’t overheat or climb its way across the worktop (I speak from experience here). Once the dough is soft and smooth, the dough is ready to proof.</div></li><li id="wprm-recipe-20006-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove the dough from the bowl and grease the sides of the bowl with a tablespoon of oil. Return the dough to the bowl and cover with a clean, damp tea towel. Allow to rest in a warm place for 60 minutes, until it has doubled in size.</div></li><li id="wprm-recipe-20006-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Knock the risen dough back to remove large air bubbles but do not knead it again. Dust your work surface with flour and roll the dough out until it’s about 2cm in thickness. Use a round cookie cutter to stamp out circles of dough and arrange on a tray lined with parchment paper. Leave some space between them, as you don’t want them to stick together while they prove again.</div></li><li id="wprm-recipe-20006-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Cover loosely with cling film and leave in a warm place for for 30 minutes.</div></li><li id="wprm-recipe-20006-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">To make the cardamom sugar, mix together the sugar and ground cardamom in a bowl.</div></li><li id="wprm-recipe-20006-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Fill a heavy-based saucepan halfway with oil. Heat the oil to 175°C/350°F.</span></div></li><li id="wprm-recipe-20006-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When the oil is heated, carefully slide the doughnuts from the tray using a floured spatula. Taking care not to deflate them, put them into the oil. Do 2-3 per batch, depending on the size of your pan. Don’t overcrowd the pan. I did 2 at a time.</div></li><li id="wprm-recipe-20006-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fry for 2 minutes on each side until golden brown. They will puff up and float to the top of the oil, so you will need to gently move them around the pan to ensure they colour evenly.</div></li><li id="wprm-recipe-20006-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove the doughnuts from the fryer and place them on kitchen paper to absorb any excess oil.</div></li><li id="wprm-recipe-20006-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place the jam in a bowl and microwave on high power for 20 seconds. Stir well to loosen slightly.</div></li><li id="wprm-recipe-20006-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fit a piping bag with a medium, round tip. Using a straw, make a small hole in the side of each doughnut, about halfway until it reaches the centre. Fill the doughnut with the warm raspberry jam through this hole, about two teaspoons of jam per piece. Repeat for the remaining doughnuts.</div></li><li id="wprm-recipe-20006-step-0-13" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Gently roll the doughnuts in the cardamom sugar until evenly coated. Serve warm.</div></li></ul></div></div>

<p>Hey Bob. I mean readers. You like what I did there? How are you all? Jammin&rsquo;? If not then you will be after reading this post. After relishing the <a href="http://korasoi.blogspot.com/2009/12/baby-its-cold-outside.html">Spiced Apple Chutney</a> I made a few months ago, I decided to take things a couple of steps further. Possibly due to the fact that oodles of diabetics were sending me (the Wicked Witch of the Web) hate mail for enticing them with my sugar-laden preserves of doom. </p>
<p>Alas, there are a number of diabetics in my family and so jam is categorically off the menu. Full stop. Fear not comrades, for I hold the silver spoon of liberation to satisfy sweet-toothed diabetics! I have been toiling at my&nbsp;<strike>cauldron </strike>stove for the past few days experimenting with&nbsp;<strike>spells </strike>recipes for sugar-free jam so I can&nbsp;<strike>force </strike>feed it to all of you sweet, sweet&nbsp;<strike>children</strike> diabetics. </p>

<p>So we have two jams on the menu tonight: <span style="font-size: large;">Sugar-free Apple and Cinnamon Jam and Sugar-free Hibiscus (Rosella) Jam.</span> For all of you who may be tutting at me for using artificial sweetener *makes puppy dog eyes at lovely, understanding readers and resembles that cutie pie, Gizmo from Gremlins and so cannot be judged* I would like to add that this is jam. Jam is sweet. Therefore you won&rsquo;t be eating heaps of it in one go. Unless you&rsquo;re a bit of a Bruce Bogtrotter (except that was chocolate cake). When you&rsquo;re diabetic and you crave sweet things, I think it&rsquo;s better to have a teaspoon of sugar-free jam with a little artificial sweetener than a Twix. Indeed, if you&rsquo;re not happy with sugar-free apple jam because it uses sweetener then I suggest you just eat an apple. Sounds harsh, no? Well my friends, that&rsquo;s the harsh reality of conserving and preserving. </p>

<p>On the brighter side of things, there&rsquo;s not too much artificial sweetener in the Apple and Cinnamon jam because the apples naturally contain their own sugar (which, if eaten in excess isn&rsquo;t that great for you either but hey, I&rsquo;m no food nutritionist). However, the hibiscus jam contains more because it is made from dried flowers, not fruit. The taste of hibiscus jam is sweet and sour like cranberries and reminds me of the taste of the fruit of the African baobab (ubuyu) tree; <span style="font-size: large;">very lemony, berry-tasting and fragrant; it almost tastes like sherbet.</span>&nbsp;Consuming hibiscus is commonly believed to lower blood glucose in those with type two diabetes. You can have a Google around and read up on this if you&rsquo;re interested (like I said, I&rsquo;m not qualified to give out health advice)&hellip; I&rsquo;m just here to jam with you. </p>

<span style="font-size: large;">Sugar-free Apple and Cinnamon Jam </span><span style="font-size: small;">(makes around 1 &frac12;-2 cups of jam)</span></p>
<p><span style="font-size: large;">Ingredients</span></p>
<p>Around 10 medium sized eating (not cooking) apples, peeled, cored and chopped into &frac12; inch pieces<br />
&frac34; cup sweetener (I used Candarel)<br />
1 cup water<br />
&frac12; tsp agar-agar powder (the pectin in the apples will do the rest of the gelatinising)<br />
1 tsp cinnamon powder</p>
<p>Method</p>
<p>1. In a large saucepan combine the apples, sweetener and water and allow to boil for around 30-35 minutes or until reduced, stirring occasionally. This makes the house smell amazing. </p>
<p>2. When significantly reduced but still a little syrupy, add the agar-agar powder and cinnamon powder. Remove from the heat.</p>
<p>3. Allow to cool and transfer to sterilised jam jars. I sterilise my jars by wetting them a little and placing them on high power in the microwave until they&rsquo;re dry. Be really careful when you&rsquo;re doing this, folks.</p>
<p>4. Refrigerate and consume within two weeks.</p>

<p><span style="font-size: large;">Sugar-free Hibiscus (Rosella) Jam</span> (Makes around 1 cup of jam)</p>
<p>As requested by my wonderful reader, John D. from Australia and adapted from <a href="http://www.cafenilson.com/2009/04/edible-flowers-hibiscus-rosella-jam/">Caf&eacute; Nilson</a></p>
<p>Ingredients</p>
<p>2 cups dried hibiscus flowers with any tough parts removed (sometimes you get little woody bits attached)<br />
1 &frac12; cups sweetener (I used Candarel)<br />
2 &frac12; cups sugar-free cranberry juice<br />
&frac12; tsp agar-agar powder</p>
<p>Method</p>
<p>1. In a large saucepan combine the hibiscus flowers, sweetener and cranberry juice. Boil for 45-50 minutes (it takes some time for the flowers to soften but leave around a cup of moisture in there). </p>
<p>2. Add the agar-agar powder.</p>
<p>3. When the flowers are soft allow the mixture to cool and transfer to a blender. Blend the hibiscus until it becomes pureed. </p>
<p>4. Transfer to sterilised jam jars (see step three of the apple jam recipe above to see how I do it) and refrigerate. Consume within 3 weeks. </p>
