<p>May I present to you this mountain of Maggi Noodles Chaat. My go-to midnight snack is a pack of instant noodles. I am currently obsessed with <a href="https://www.amazon.co.uk/shop/sanjana.feasts?listId=3IBPUN0KBVO77&amp;ref=idea_share_inf" target="_blank" rel="noreferrer noopener"><strong>Samyang Yukgaejang Hot Mushroom Flavour Ramyun</strong></a> which will both fill your belly and blow your taste buds to smithereens with chilli heat. </p>



<p>Maggi Masala Magic is great option for those days when you don&#8217;t fancy eye-watering spice.</p>

<p>In any case, my favourite thing to do is dress up my instant noodles with add-ins. In the case of those dynamite Korean noodles, I slice up medium-firm tofu into cubes, pop it into double the amount of water stated on the pack, add a liberal heap of kimchi and a handful of grated carrots along with the seasoning packs included.</p>



<p>The result is a shockingly-inauthentic attempt at Kimchi-jjigae. I apologise to Korean grandmothers everywhere. However, my midnight bowl is both fast and satisfying.</p>



<h2 class="wp-block-heading">So what&#8217;s Maggi Noodles Chaat?</h2>



<p>Seems pretty self explanatory but let me break it down for you; First, you take a packet or two of India&#8217;s favourite instant noodle, Maggi Masala Magic.</p>



<p>Break them up into smaller pieces, saute in oil until slightly golden, add the masala magic packet, and just a splash of water (not the whole amount). Cover and cook for 2 minutes.</p>



<p>Thow in some boiled potatoes and chickpeas. Stir and heat through. A handful of chopped red onions, tomatoes and fresh coriander go in. Toss. Pile inelegantly onto a plate.</p>



<p>Top with a mountain of Indian chaat favourites like crunchy sev, masala yoghurt, more onions, tomatoes, chaat masala and three kinds of chutney. I won&#8217;t even tell if you choose to sprinkle in some crushed crisps. Dig in fast so you don&#8217;t have to share. Leave no clues of your midnight feast.</p>



<p>Or, of course, you can make it as a legit day time snack and share it with everyone. Either way, I promise it will smash your chaat cravings like a flavour whack-a-mole.</p>

<h2 class="wp-block-heading">Troubleshooting: Maggi Noodles Chaat</h2>

I use Maggi Masala Magic because of the curry powder in gives somewhat of an Indian flavour. This is a no-rules recipe though so go wild and use whatever you like.</p> </div> <div class="schema-faq-section" id="faq-question-1591740504513"><strong class="schema-faq-question">Why do you break the noodles up?</strong> <p class="schema-faq-answer">Because it makes the whole chaat easier to eat. Lazy midnight snacks and sharing plates call for easy eating.</p> </div> <div class="schema-faq-section" id="faq-question-1591740562538"><strong class="schema-faq-question">Wht do you toast the noodles first?</strong> <p class="schema-faq-answer">A quick stir-fry in hot oil gives the noodles a wheaty, delicious aroma and flavour. It&#8217;s just another building block of flavour.</p> </div> <div class="schema-faq-section" id="faq-question-1591740650895"><strong class="schema-faq-question">Why don&#8217;t you add the full amount of water?</strong> <p class="schema-faq-answer">It will turn to mush. Take the noodles off the heat while they are still have a little bite to them as they will continue to cook even after they come off the heat. It&#8217;s just better when they&#8217;re firm but again, this is your dish so you do you.</p> </div> <div class="schema-faq-section" id="faq-question-1591740757772"><strong class="schema-faq-question">Can I add other toppings and chutneys?</strong> <p class="schema-faq-answer">Absolutely. Get creative and add whatever chaat toppings you like to this.</p> </div> <div class="schema-faq-section" id="faq-question-1591740853066"><strong class="schema-faq-question">Can I make this ahead of time?</strong> <p class="schema-faq-answer">You can prep all the toppings but I wouldn&#8217;t cook anything until you&#8217;re ready to eat. If you do, things may end up going a bit stale and dry.</p> </div> </div>

Break the noodle cakes up with your hands. Add the oil and saute the noodles of a medium heat for 90 seconds or so.</span></div></li><li id="wprm-recipe-21575-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add the packets of magic masala that come in the Maggi packets, along with 150ml water.</span></div></li><li id="wprm-recipe-21575-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place a lid on the pan and cook over a moderately low heat for 2 minutes. Remove the lid and stir well.</span></div></li><li id="wprm-recipe-21575-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add the chickpeas, potatoes, onions and tomatoes. Stir to combine and allow to cool for 10 minutes or so. It shouldn&#039;t be super hot when you put the toppings on, unless you prefer it like that of course.</span></div></li><li id="wprm-recipe-21575-step-2-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Pile the noodles onto a plate and top with the green chutney, masala yoghurt and remaining chaat toppings (fresh coriander, tamarind chutney, red chutney, sev or bhujia, chilli powder,  chaat masala and lemon wedges). Go wild and add as much or as little of everything as you like.</span></div></li></ul></div></div>

<p>I don’t know about you but I could eat noodles every day. I like to work them into my meal rotation every week, pairing with different broths and sauces to keep things feeling fresh and exciting.</p>



<p>Sundays in our home are reserved for nutritious and wholesome broths that I simmer low and slow. Slow cooking allows the aromatics to gently steep into the broth, releasing beautiful fragrance and goodness. Each drop of infused broth packs flavour and that’s what makes it, in my eyes, worthy of the name “Liquid Gold”.</p>



<h2 class="wp-block-heading">What is ramen?</h2>



<p>Ramen might be a one-bowl Japanese food hero, but the broth and noodle combo is as varied as it is delicious.</p>



<p>Not all ramens are the born the same. Some are punchy and intense, others light and fresh. The broth is what sets your taste and tone – noodles and other ramen ingredients are there to enhance the umami-rich liquid. In other words, it’s ALL ABOUT THE BROTH.</p>

<p>The choice is yours! I use udon for their wholesome, filling quality. Bodhi loves them as they’re easy for little fingers to pick up, too. However, there are no rules when it comes to choosing your ramen noodles. Use whatever you like or whatever you have. I’ve made countless versions using classic wheat flour noodles, soba noodles (buckwheat noodles), rice noodles, edamame noodles and everything in between. Go wild.</p>

										<content:encoded><![CDATA[<p>Mung beans, plus water, plus 72 hours is my kind of maths. Watching the process of mung beans cracking and sprouting over three days has fascinated me since the age of seven and it still fascinates me now I’m 30.</p>
<p>The shrill pitter patter of the mung beans being poured into a bowl and the swoosh and clatter of them being washed and rinsed reminds me of waves lapping the shore at Bamburi Beach, Mombasa. It’s a place where I’ve had a bucket load of happy food memories.</p>

<p>First the mung beans bloom; They’re fat and full of water. Next, their sage skins crack and reveal the creamy white of the inside, rather like Japanese Kintsugi. After a few days and minimal TLC the mung beans begin to sprout delicate tendrils which get longer over the span of 24 hours. Full of goodness and earthy crunch, the mung beans are ready to eat.</p>
<p>Make your own sprouted mung beans by washing them and soaking for 24 hours. Once they’re plump, drain the water from them and scatter them into a colander lined with kitchen paper. Cover with another piece of kitchen paper and leave them for 48 hours, trickling a little water on the top piece of kitchen paper after the first 24 hours. Keep them on the countertop at room temperature. After 72 hours, they will be ready to eat. You can store them in the fridge for 24 hours.</p>

<p>You can pack the sprouted mung beans into lunchboxes, toss them through salads, stir-fry them with spices or eat them straight up with a spoon. I like to pack some protein into my breakfasts and my go-to ingredients to do this are sprouted mung beans, tofu, cheese and edamame. This dish puts sprouted mung beans to good use.</p>
<p>My lightly stir-fried vermicelli noodles are tossed with sprouted mung beans, crackled mustard seeds, curry leaves, chillies and turmeric for a big, punchy breakfast number you’ll cook again and again. Transform it into a filling lunch or dinner with the addition of pan-fried tofu.</p>

										<content:encoded><![CDATA[<p>One of my favourite weeknight dinners is stir-fried tofu with colourful veggies, noodles and heaps of chilli. This is a twist on Chilli Paneer – that Indian vegetarian restaurant favourite that has found its way onto wedding menus and dinner tables at home. As much as I love paneer, I find it a little too heavy to have with noodles or rice – this is where tofu noodle bowls come to the rescue.</p>
<p>They might look quite ordinary but the sauce packs a real punch, seasoning the golden tofu and noodles perfectly. It’s made using large red chillies, garlic, spring onions, soy sauce, star anise and brown sugar. A combo of ingredients I always have in the house. I throw in any vegetables I have in the fridge – usually a mix of broccoli, mushrooms, beansprouts,&nbsp;mange tout or French beans.</p>

<p>My special touch to these is to add crispy okra strips and fried Thai basil leaves. They add the most beautiful crunch and are a delicious way of getting your okra fix as part of a dish that’s not curry. To make them, slice okra into long, thin strips, toss in a little cornflour and allow to sit for five minutes. Plunge them into hot oil and fry for 2-3 minutes until crispy and slightly golden. Try not to move them too much in the first minute to give the cornflour time to set on the okra.</p>
<p>To achieve a pretty red colour, I add in a couple of tablespoons of Sriracha (Thai chilli sauce made with dried red chillies and garlic). If you haven’t tried it before – where have you been? It’s the ultimate intense chilli sauce for adding instant flavour. I add it to mac and cheese, toasties, masala chips and even potato curry. It’s almost like Gujarati lasan vari chutney but in sauce form; A squidge of it in plain natural yoghurt will give you the fastest ever sauce for bhajia and samosa chaat. You can buy it in the Asian section of most supermarkets now. Look for the squeezy bottle with a rooster on the front. Even my parents, who are life-long advocates of Tabasco now prefer it.</p>
<p>I used Shanghai noodles here but you could just as easily use rice noodles, udon or even fresh ramen noodles. If noodles aren’t your thing, skip them and serve the stir-fried tofu and veggies with steamed jasmine rice. Garnish with the fried okra and Thai basil, then devour.</p>

<h3>Chilli-Garlic Tofu Noodle Bowls with Crispy Okra</h3>
<p>Serves 4</p>
<h4>Ingredients</h4>
<p><strong>For the chilli paste:<br />
</strong>1 large red chilli<br />
3 cloves garlic, peeled<br />
<span style="line-height: 1.73">1-inch piece ginger, peeled<br />
</span>3 large spring onions, trimmed and quartered<br />
3 tbsp Sriracha<br />
2 tbsp brown sugar<br />
Juice and zest 1 lime</p>
<p><strong>For the stir fry:</strong><br />
1 tbsp oil<br />
1 star anise<br />
100g broccoli florets<br />
Handful mushrooms, sliced<br />
40g mange tout<br />
50g beansprouts<br />
1 large red chilli<br />
4 tbsp light soy sauce<br />
200g golden tofu puffs<br />
3 tbsp Sriracha<br />
200g cooked noodles<br />
Salt to taste</p>
<p>10-15 Thai basil leaves</p>
<p><strong>For the crispy okra:</strong><br />
100g okra, sliced into long thin strips<br />
1 tsp cornflour</p>
<h4><strong>Method</strong></h4>
<p>1. First make the crispy okra and thai basil. Cut the okra into long, thing strips, place onto a plate and dust over the cornflour. Stir to combine and set aside for 5 minutes.</p>
<p>2. Heat the oil in a pan. Once hot, turn the heat down and very carefully add in the Thai basil. It will crackle and spit in the first 30 seconds so stand right back. Be super careful even once it stops crackling. Fry until deep green and crispy. Remove from the oil with a slotted spoon and place onto a place lined with kitchen paper.</p>
<p>3. Next, turn the heat up on the oil again and add in the okra. Don’t move them around in the first minute in order to let the cornflour set. Cook for 3-4 minutes, then remove and place onto the kitchen paper with the Thai basil. Set aside.</p>
<p>4. Blend together all the ingredients for the chilli paste.</p>
<p>5. Heat the oil in the wok, add the chilli paste and star anise. Cook on a medium heat for 5 minutes, stirring all the time.</p>
<p>6. Add in the broccoli, soy sauce and extra Sriracha. Next, add the rest of the vegetables except the beansprouts and chilli. Stir fry for 3-4 minutes on a high heat. Add the tofu puffs and sauté for another few minutes, adding a little water if it seems dry.</p>
<p>7. Add the cooked noodles, beansprouts and chilli, stirring to combine. Stir fry for 3-4 minutes and remove from the heat.</p>
<p>8. Serve immediately, topped with crispy okra and Thai basil.</p>

<p>I guess it just affirms that we&rsquo;re all big kids just waiting to be fed at heart.</p>
<p class="MsoNormal">When I think of Falooda I think of my dad and the big smile that emerges on his face whenever he rumbles the fact there&rsquo;s something sweet on the menu. We&rsquo;re two peas in a pod.</p>
<p class="MsoNormal">When I was little he used to take the whole family to a favourite restaurant in either Leicester or Bradford on a Sunday afternoon and we&rsquo;d have the most memorable family meals. Mum would order something classy and simple, Dad would get the thali and my brother and I would squabble over whether they put coriander in the daal or not.</p>
<p class="MsoNormal">Regardless of what Ravi and I were arguing about, Dad would always diffuse the situation by asking me the golden question. That cheeky smile would spread across his face and he&rsquo;d say one word, &lsquo;Falooda?&rsquo;</p>
<p class="MsoNormal">And that was all it took. I&rsquo;d be content without coriander in the daal and no samosa starter because I knew I was getting to drink what is practically a dessert with my main meal. Happy days.</p>
<p>What the fudge is Falooda, I hear you ask?</p>
<p class="MsoNormal">A rose-flavoured milkshake with rice noodles, basil seeds, milk jelly diamonds and a couple of scoops of ice cream.</p>
<p class="MsoNormal">If you love ice cream sundaes, this will be your kryptonite. </p>
<p>I&rsquo;ve been a bit playful with my version and tweaked what is a very classic Indian Falooda into what can only be described as a bloody delicious deviation. Meet the Stawberry Cheesecake Falooda &ndash; a hybrid between two separate ends of the world. A bit like me, I suppose.</p>
<p class="MsoNormal">Imagine this; all the gorgeousness of classic Falooda with the fruitiness of strawberries to compliment the delicate rose flavour, a hint of malt from the biscuits, the creaminess of light Italian mascarpone cheese and some strawberry cheesecake ice cream to top it all off.</p>
<p class="MsoNormal">This one&rsquo;s all for you, Pops. Don&rsquo;t tell Mum.</p>

(Serves 2)</p>
<p class="MsoNormal"><strong>Ingredients for the milk jelly:</strong></p>
<p>240ml milk<br />
5g agar agar/China grass strands, snipped into small pieces<br />
3 tablespoons sugar<br />
200ml warm water<br />
Few drops pink food colour</p>
<p class="MsoNormal"><strong>Method:</strong></p>
<p class="MsoNormal">1. Soak the agar agar in warm water for about 15 minutes. Meanwhile, gently bring the milk to the boil. Squeeze the agar agar to remove any water and mix it into the boiling milk. Stir continuously until completely dissolved. Add the sugar and keep on stirring for a few minutes.</p>
<p class="MsoNormal">2. Lightly grease a steel plate and pour in the milk. Allow to cool to room temperature, then place into the fridge until set. When set, cut the jelly into diamond shapes. Refrigerate until needed.</p>
<p class="MsoNormal"><strong>Ingredients for the rest of the Falooda:</strong></p>
<p class="MsoNormal">280ml milk<br />
50ml rose syrup<br />
4 large strawberries<br />
1 tablespoon mascarpone cheese</p>
<p>2 Rich Tea-style biscuits, crushed<br />
1 tablespoon takmaria (basil seeds), soaked in cold water for 20 minutes (you can get these in South Asian grocery shops or online)<br />
60g rice noodles, cooked according to packet instructions, then soaked in 1 tablespoon rose syrup</p>
<p class="MsoNormal">4 scoops strawberry cheesecake ice cream<br />
2 strawberries to garnish</p>
<p class="MsoNormal"><strong>Method:</strong></p>
<p class="MsoNormal">1. Place the milk, rose syrup, strawberries and mascarpone cheese in a blender and blitz until smooth. Pour into a jug, cover, then chill in the fridge for 20 minutes.</p>
<p class="MsoNormal">2. Grab yourself two ice cream sundae glasses or other tall glassware. Divide the takmaria and noodles between the glasses, then add a few pieces of milk jelly and the crushed biscuits. Pour over the strawberry and rose milkshake, leaving some room for the ice cream.</p>

<div style="text-align: left;">Love noodles? So do I. This quick and easy recipe for spicy vegetable noodles is something I recently made for breakfast. You know I love a hearty breakfast. I needed something warming and flavourful and the chilli heat from these stir-fried noodles really hit the spot.</div>

<div style="text-align: left;">Vermicelli is a thin pasta I usually use to make Indian sweet dishes like Doodh Vari Sev (vermicelli in sweetened milk). A heap of crackling mustard seeds and aromatic sesame seeds spike the dish with light spice and a pinch of turmeric gives the finished dish a beautiful golden yellow colour.&nbsp;</div>

<div style="text-align: left;">Feel free to add any vegetables you like to this, as I just used what I had in the fridge. A handful of finely shredded strips of carrot make for a fresh and crunchy topping which is a lovely contrast from the soft noodles.&nbsp;</div>

<div style="text-align: left;">I also added some frozen peas for a little burst of sweetness, but you could also use sweetcorn. And obviously, there&#8217;s always room for paneer. Not that I added any &#8211; did you know I was on a diet?&nbsp;</div>

<div class="MsoNormal">Recently, the lovely people over at <a href="http://www.pataks.co.uk/" rel="nofollow noopener noreferrer" target="_blank">Pataks</a> sent me some sample jars of their curry sauces &ndash; Tikka Masala, Phal and Vindaloo (which had unfortunately broken during transit even though they had packaged them up well). Spying the package on the doorstep, I pounced on it, desperate to find out what was inside.</div>

<div class="MsoNormal">I don&rsquo;t usually use store-bought curry pastes or sauces, especially Indian ones but I was intrigued to find out how they worked, anticipating that I&rsquo;d have to make many alterations to suit my taste. This was definitely not the case.</div>

<div class="MsoNormal">Phal, the jar which I was most drawn to, was adorned with several chilli images indicating it was going to be super spicy &ndash; just how I like it. And of course, there&rsquo;s no better way to use a spicy curry paste than with mild, creamy coconut milk and plenty of crunchy veggies.</div>

<p>It had been decided, I was to make a deliciously spicy Curried Coconut Noodle Soup, packed with vegetables from baby corn to exotic mushrooms and light rice noodles. A shower of crunchy beanspouts scattered on top finishes the dish off perfectly.</p>

<div class="MsoNormal">I popped open the lid, had a little taste and cockily sniggered that it was far from spicy. After heating the sauce in my wok, I tasted again and pretty much ate my words. I won&rsquo;t lie to you; I was close to tears. The chilli was brought alive by the heat from cooking and unless you&rsquo;re hardcore, you will need plenty of coconut milk to douse the flames.</div>

<div class="MsoNormal">(Serves 4)</div>
<div class="MsoNormal">&nbsp;</div>
<div class="MsoNormal"><span style="font-size: large;">Ingredients</span></div>
<div class="MsoNormal">&nbsp;</div>
<div class="MsoNormal">70g green beans, trimmed and halved</div>
<div class="MsoNormal">70g baby corn, sliced lengthways</div>
<div class="MsoNormal">70g cabbage, finely sliced</div>
<div class="MsoNormal">150g fried tofu, sliced into strips</div>
<div class="MsoNormal">50g mixed mushrooms, (I used chestnut, Enoki and Honshimeji)</div>
<div class="MsoNormal">50 beansprouts</div>
<div class="MsoNormal">175g Pataks Phal curry sauce (1/2 jar)</div>
<div class="MsoNormal">800ml light coconut milk</div>
<div class="MsoNormal">300g rice noodles, cooked</div>
<div class="MsoNormal">4 kaffir lime leaves, sliced</div>
<div class="MsoNormal">1 star anise</div>
<div class="MsoNormal">2 tsp tamarind paste</div>
<div class="MsoNormal">3 tbsp sugar</div>
<div class="MsoNormal">1 tsp salt</div>
<div class="MsoNormal">&nbsp;</div>
<div class="MsoNormal">&nbsp;</div>
<div class="MsoNormal"><span style="font-size: large;">Method</span></div>
<div class="MsoNormal">&nbsp;</div>
<div class="MsoNormal">1. Heat      the curry sauce in a large wok until bubbling &ndash; about 5 minutes. Add the      lime leaves, star anise, sugar, salt and tamarind.</div>
<div class="MsoNormal">&nbsp;</div>
<div class="MsoNormal">2. Pour      in the coconut milk and bring to the boil. Add the green beans, baby corn,      tofu and mushrooms. Simmer for 4 minutes. Add the cabbage, beansprouts and      rice noodles. Cook for a further 4-5 minutes.</div>

<div class="MsoNormal">3. Remove      from the heat, pile into bowls and garnish with more beansprouts and tofu      strips.</div>
