<p>Have my vegetarian 20-Minute Aloo Methi curry on the table faster than it takes to order a takeaway! This Indian potato and fenugreek leaf curry, also know as <em>Aloo Methi ki Sabji</em> is a weeknight staple in my home alongside soft roti.</p>



<p>I have a few tricks up my sleeve, including how to prepare potatoes that&#8217;ll melt in your mouth, as well as how to clean fresh methi (fenugreek leaves).</p>

<h2 class="wp-block-heading">My first time cooking with methi</h2>



<p>&#8230; was a disaster! Funnily enough, it was also a complete accident because I didn&#8217;t set out to make methi <em>anything </em>that day.</p>



<p>My mother was in India with my <em>masi</em> (her sister) so I was home with my brother, dad and Bapu (dad&#8217;s bother) who was visiting.</p>



<p>With dad and Bapu in our family newsagents all day, my 11-year old self thought it would be nice to prepare dinner for when they got home. My plan was to make <em>Bhaji</em> and <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2017/02/homemade-chapattis-gujarati-rotli/"><em>Rotli</em>,</a></strong> a simple curry of spinach leaves and chapatis to go with it.</p>

<p>First problem: We didn&#8217;t have any fresh spinach. Never mind, I thought. I&#8217;d seen my mum make <em>Bhaji</em> with both frozen and tinned spinach before and it was always great. To the freezer I marched.</p>



<p>I pulled a bag of the solid leafy greens from the freezer and got to work. I chopped the garlic, did a tadka of cumin seeds, asafoetida and fresh chillies. It was going famously. I felt like a young Tarla Dalal. Finally, a dash of salt and a little taste test&#8230;</p>



<p>The spoonful of <em>Bhaji</em> went into my mouth and then immediately came back out. Wretched. It was as bitter as Cobra Kai&#8217;s sensei Kreese in <em>The Karate Kid.</em></p>

<h2 class="wp-block-heading">So what went wrong?</h2>



<p>I dug the packet of frozen spinach out of the freezer and re-read the label. &#8216;<em>METHI BHAJI</em>&#8216;. My bubblegum brain had made a solo fenugreek leaf curry!</p>

<p>If this happened to me today, I&#8217;d simply chuck in a load of cooked potatoes but when I was first starting out, my instinct was to cut my losses and make something else.</p>



<p>My dad, Bapu and brother came home and sat down to the plan B Kadhi and rotli I had made last minute (Mrs Doubtfire style). They ate the methi bhaji, too. Dad and Bapu said it was great, my brother told me I was &#8220;a plonker&#8221;.</p>



<p>Did they eat it out of courtesy? Probably. Did that still mean everything to my novice cook self? <em>Absolutely.</em></p>

<h2 class="wp-block-heading">Where to buy fresh methi (fenugreek) in the UK</h2>



<p>I recommend visiting your local fruit and vegetable market. South Asian food shops and greengrocers will certainly have bunches of fresh methi.</p>



<p>Many large supermarkets now stock fresh methi in their ethnic produce sections.</p>

<div class="schema-how-to wp-block-yoast-how-to-block"><p class="schema-how-to-description">How to prepare and clean fresh fenugreek leaves (methi)</p> <ol class="schema-how-to-steps"><li class="schema-how-to-step" id="how-to-step-1615829028148"><strong class="schema-how-to-step-name">Pick and pluck though the fresh methi</strong> <p class="schema-how-to-step-text">Start by picking through the methi. Pluck off only the leaves and young stems. The thick stems are edible but I don&#8217;t tend to use them for curries like this since they require long cooking and can be tough to chew. Pick out any methi that looks less than fresh, too — large bunches will usually have a few of these.</p> </li><li class="schema-how-to-step" id="how-to-step-1615829072504"><strong class="schema-how-to-step-name">Wash the methi leaves</strong> <p class="schema-how-to-step-text">Thoroughly wash fresh methi in plenty of cold water, either under running water or in a large basin or bowl. If you use a bowl, change the water 3-4 times to ensure all surface dirt, etc has been removed.</p> </li><li class="schema-how-to-step" id="how-to-step-1615829091563"><strong class="schema-how-to-step-name">Drain the methi</strong> <p class="schema-how-to-step-text">Drain the methi leaves in a colander or sieve.</p> </li><li class="schema-how-to-step" id="how-to-step-1615829105985"><strong class="schema-how-to-step-name">Chop the methi</strong> <p class="schema-how-to-step-text">Finely chop the methi leaves. They are now ready to use in this recipe for Aloo Methi.</p> </li></ol></div>

<h2 class="wp-block-heading">How to freeze fresh methi</h2>



<p>Follow all the steps in the how-to above. Ensure the methi leaves are completely dry before packing into a freezer-safe container or bag. Freeze for 6-8 months.</p>



<h2 class="wp-block-heading">Is methi the same as fenugreek?</h2>



<p>Yes. Fenugreek is the English name for Methi (its&#8217; name in Hindi, amongst other South Asian languages).</p>



<h2 class="wp-block-heading">Can I use dried (kasoori methi) in place of fresh methi?</h2>



<p>No. I don&#8217;t recommend replacing the fresh methi in this recipe with dried. The flavours differ a great deal. Dried methi is extremely potent and fresh has a mild, grassier flavour, so they cannot be used interchangeably.</p>

<p>My recipe includes juliennes of fresh turmeric for both a golden colour and a bright, citrusy flavour. They balance the earthy, caramel-bitterness of the fenugreek, while the potatoes make it a meal.</p>

<h2 class="wp-block-heading">3 tips for preparing fresh turmeric</h2>



<ol><li><strong>Wear gloves!</strong> It&#8217;s wise to glove up before you begin handling fresh turmeric. The colour will stain your hands and nails for days.<br></li><li><strong>Protect your work station. </strong>As well as covering your hands, it&#8217;s a good idea to lay down newspaper or an old tea towel before you start. This will save you having to bleach them back to their normal colour.<br></li><li><strong>Use a teaspoon to scrape off the skin.</strong> Just like preparing fresh ginger, the most effective and least wasteful way to peel fresh turmeric is with a teaspoon.</li></ol>



<h2 class="wp-block-heading">How to prepare potatoes for 20-Minute Aloo Methi</h2>



<p>My cooking medium of choice may be an unconventional one, but it s a fast and easy method: Microwave!</p>



<p>I simply wash my potatoes, prick the skins with a fork and them microwave for 8 minutes or so, until they&#8217;re soft inside. The cooking time will vary depending on your microwave so keep an eye on them.</p>



<p>Once they&#8217;ve cooled, I peel them (keep the skins on if you prefer) with my fingers. They&#8217;re really easy to peel because the potatoes shrink slightly and the skin becomes loose.</p>



<h2 class="wp-block-heading">What type of potatoes should I use for 20-Minute Aloo Methi?</h2>



<p>Any variety of potato will work in this recipe, although floury potatoes for baking such as Maris Piper or King Edward produce the best results.</p>

Place on a microwave-safe plate and cook in the microwave for 10 minutes or until soft. Allow to cool. Peel and cut into 2cm/1-inch pieces.</span></div></li><li id="wprm-recipe-23657-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Heat the oil or ghee in a large pan. Add the mustard seeds and allow them to crackle. Next, add the cumin seeds and asafoetida. Sauté for a few seconds and then add the slit chillies, fresh turmeric juliennes and garlic. Sauté for 30 seconds.</span></div></li><li id="wprm-recipe-23657-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add chilli powder, fresh methi and salt. Stir to combine. Cook over a medium heat, stirring all the time for 4-5 minutes. Add the potatoes and stir well to coat the potatoes in the spices and methi. Cook for a further 2-3 minutes before adding the tomatoes. Add optional garam masala at this stage. I often prefer it without! Stir briefly and then remove from the heat. </span></div></li><li id="wprm-recipe-23657-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Serve hot with roti or paratha.</span></div></li></ul></div></div>

<li>Fresh turmeric gives this curry wonderful flavour and colour. If you are unable to use fresh turmeric, add 1/2 tsp dried ground turmeric along with the chilli powder.</li>
<li>Do not replace fresh methi (fenugreek leaves) with dried/kasoori methi in this recipe.
</li>
<li>Any variety of potato will work in this recipe, although floury potatoes for baking such as Maris Piper or King Edward produce the best results.</li>

<h2 class="wp-block-heading">What&#8217;s in the Sri Lankan-style spice mix?</h2>



<p>The whole affair of making your own Sri Lankan roasted curry powder is heady and delectable. Traditional blends are made up of whole spices which are dry roasted until toasty. Sometimes toasted raw rice is goes in for amazing depth of flavour.</p>

<p>Indeed, each recipe will vary from home to home but the process is very much the same. My recipe includes: <strong>mustard seeds, fennel seeds, cloves, peppercorns, coriander seeds, fenugreek seeds, cinnamon, turmeric, dried chilli and roasted rice.</strong></p>

<p>I call these wedges &#8220;Sri Lankan-style&#8221; because they&#8217;re inspired by the flavours of Sri Lankan curry powder but I do not roast the spices prior to grinding them. The reason for this so the spices do not burn in the very hot oven we require to produce crispy wedges.</p>



<p>This is very much an inauthentic dish but delicious nevertheless! Our staple Saturday night sort of fare alongside a big salad.</p>



<h2 class="wp-block-heading">How to make crispy potato wedges: add toasted raw rice!</h2>



<p>Following the rules of Sri Lankan curry powder, I add toasted raw rice for delicious flavour. Incidentally, the ground toasted rice also creates a perfectly crispy coating for each potato wedge. I&#8217;ll never make wedges without ground rice again!</p>

<h2 class="wp-block-heading">What&#8217;s the best potato to use for wedges?</h2>



<p>Any variety of potato with floury flesh is ideal for potato wedges (what you&#8217;d use for a baked potato). In the UK, you can use both King Edward and Maris Piper potatoes. For my US readers, Russet potatoes (Idaho potatoes) are ideal.</p>



<p>In any case, choose spuds with a dry, mealy texture as opposed to waxy as these make for the fluffiest wedges.</p>



<h2 class="wp-block-heading">How to cut potato wedges</h2>



<p>I like my potato wedges big. I choose the largest baking potatoes I can find and scrub them clean. It&#8217;s best to keep the skins on.</p>



<p>Cut each potato in half lengthways. Each half needs to be halved and then halved again lengthways to create a wedge-like shape.</p>

<h2 class="wp-block-heading">How to cook potato wedges in the oven</h2>



<p>Grab a large baking tray (non-stick is handy and prevents the potatoes from sticking). Be sure to give the potato wedges enough room so they can brown nicely. If they&#8217;re piled on top of each other, they&#8217;ll just get soggy.</p>



<p>When I prepare potato wedges for 4 people, I find around 700g potatoes makes for generous side portions. Pre-heat the oven to 200°C/400°F (fan assisted), at least 30 minutes before you start.</p>



<p>Mix in your seasonings and make sure the potatoes are coated in a layer of oil.</p>



<p>Bake the potatoes in a single layer for 40-45 minutes. Toss them around at the halfway mark to make sure they&#8217;re cooking and browning evenly.</p>

<h2 class="wp-block-heading">Why do my potato wedges stick?</h2>



<p>There could be several reasons why your potato wedges stick to the pan. Here are some of them.</p>



<ul><li>There&#8217;s not enough oil on the potatoes. Add more.</li><li>The tray might not be ideal. Try a non-stick one.</li><li>There may be excess starch in the potatoes. Wash and soak the cut wedges in cold water for 10 minutes before you season them. Be sure to dry them off in a clean tea towel after soaking.</li></ul>



<h2 class="wp-block-heading">Can I fry these potato wedges?</h2>



<p>No, I don&#8217;t recommend you fry these potato wedges. The recipe has been developed for oven baking. The seasoning is likely to fall off in the oil if you try to deep fry them.</p>

Pound or grind to a fine powder. It&#039;s okay if some of the rice still feels a little coarse.</span></div></li><li id="wprm-recipe-23558-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cut the potatoes into large wedges. Place them on a large baking tray. Drizzle over the oil and then add half of the curry leaves, crushed garlic and spice mix. Toss with your hands to coat all the wedges. </span></div></li><li id="wprm-recipe-23558-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Bake in a pre-heated oven for 40-45 minutes, tossing the potatoes halfway to ensure they brown evenly. The rice will ensure they&#039;re deliciously crispy on the outside.</span></div></li><li id="wprm-recipe-23558-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Fry the remaining curry leaves in hot oil until crispy. Scatter these, along with the chillies on top.</span></div></li><li id="wprm-recipe-23558-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Serve with your favourite dip. <h2 class="wp-block-heading">From picnic blanket to kitchen table</h2>



<p>I grew up in a town in West Yorkshire. It was a picturesque place full of friendly people. My family made life-long friends there. We lived above our newsagents for many years before moving to a more spacious home.</p>



<p>The kitchen above the shop was incredibly compact. We&#8217;d lay a picnic blanket out on the floor to roll <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2012/10/mombasa-style-daal-kachori-spiced-daal-and-green-mango-in-flaky-pastry/">Daal Kachori</a></strong> and fold <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2019/09/the-best-vegetable-samosas/">Samosas.</a></strong> Sitting cross-legged, we&#8217;d hum to Anup Jalota bhajans.</p>

<p>His rendition of <strong><a href="https://www.youtube.com/watch?v=EnuJWOVeScs&amp;list=PLtiO9qjeNatp93-2R8OXDm5FqQUSOC5yG">Hanuman Aarti</a></strong> will forever be etched in my mind as the soundtrack that fortifies mum&#8217;s Saturday morning <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2010/06/gujarati-style-urad-daal/">Urad (black lentils).</a></strong> This experience bore and fostered my curiosity for cooking, from the age of just six or seven.</p>



<p>When we moved some years later, I remember my mum&#8217;s joy at having a modern kitchen where she could cook her heart out. She loved that her new kitchen was an &#8216;L&#8217; shape with enough room for a table.</p>



<p>Sunday lunchtime <a style="font-weight: bold;" href="https://staging.sanjanafeasts.co.uk/blog/2020/06/puffy-masala-poori/">Masala Poori</a>, <a href="https://staging.sanjanafeasts.co.uk/blog/2020/07/gujarati-koru-bateta-nu-shaak/"><strong>Bateta nu Shaak</strong></a> and <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2011/04/classic-shrikhand-and-eggless-red-velvet-cupcakes/">Shrikhand</a></strong> may have tasted the same but now they were now enjoyed at the table, not on our laps. We ate every meal there as a family for the next eight years.</p>

<p>I learnt to cook a great deal in both kitchens but my sweetest memories came from that tiny kitchen above the corner shop.</p>



<h2 class="wp-block-heading">I&#8217;ll keep the chai warm</h2>



<p>Sunday afternoons would be spent browsing through well-thumbed cookbooks together, chatting about what we can cook up next. Mum&#8217;s collection of recipe books blew my curious mind. Never one to miss a trick, she would translate the ones written in Gujarati to English for me.</p>

<p>No matter how un-traditional my recipe ideas were, mum would always encourage me to try them out. <a href="https://staging.sanjanafeasts.co.uk/blog/2011/05/eggless-saffron-and-lemon-shrikhand-doughnuts/"><strong>Shrikhand-filled Doughnuts</strong></a> and <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2013/08/stuffed-naan-pockets-with-spicy-pizza-dip/">Naan Pizza Pockets</a></strong>, anyone?</p>



<p>It was this encouragement, peppered with her sage advice that nurtured my passion. Everything grew from these moments we shared, from the picnic blanket on the floor, to the kitchen table.</p>

<p>With multiple lockdowns this past 12 months, having tea, scones and chats with her have been the thing I’ve missed the most. I&#8217;ll keep the <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2021/01/very-good-homemade-masala-chai/">Chai</a></strong> warm until we can do that again.</p>



<h2 class="wp-block-heading">What’s in Masala Cheese Scones?</h2>



<p>Aside from the basic flour, butter, milk and leavening agents, I add a blend of two cheeses, chilli, coriander, onions and garam masala.</p>



<p>I use my <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2020/11/homemade-garam-masala/">Homemade Garam Masala</a></strong> in these scones. The flavour you get from home-roasted and ground spices is wonderful. Indeed, if you don’t have time, you can use shop-bought garam masala.</p>

<p>These vegetarian Masala Cheese Scones can be ready in under 40 minutes, including prep time.</p>



<h2 class="wp-block-heading">How to serve these Scones</h2>



<p>Serve them with chai, your favourite mango chutney or even alongside a bowl of tomato soup. They’re light, flaky and full of spiciness. Feel free to reduce or increase the amount of chillies as per your taste.</p>

<h2 class="wp-block-heading">How to make Vegan Cheese Scones</h2>



<p>You’ll need to make a few swaps to the recipe below. Instead of butter, use any soft, plant-based spread (vegan block) of your choice. Don’t use oil.</p>



<p>Swap the milk in both the dough and for the milk wash for any unsweetened dairy-free milk.</p>



<p>Instead of the dairy cheese, use your favourite brand of vegan cheese. I love vegan <strong><a href="https://www.applewoodcheese.co.uk/" target="_blank" rel="noreferrer noopener">Applewood Smoked Cheese</a></strong>.</p>

<h3 class="wp-block-heading">Option 1: Turmeric &#8220;Eggwash&#8221;</h3>



<p>If you’ve been following me for a long time, you’ll remember these <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2012/09/mini-mushroom-kalonji-and-feta-pies/">Mini Mushroom &amp; Feta Pies.</a></strong> This was one of the first times I made an eggwash without eggs and the results were perfect.</p>



<p>I usually mix together warm milk and a very small amount of ground turmeric. And there you have it. A perfect “eggwash”, minus the eggs.</p>



<h3 class="wp-block-heading">Option 2: Coconut &#8220;Eggwash&#8221;</h3>



<p>Mix together warm coconut milk, a tiny pinch of turmeric and a drizzle of agave for a shiny finish. This is how I give my <strong><a href="https://staging.sanjanafeasts.co.uk/blog/2021/01/easy-vegan-curry-puffs/">Vegan Curry Puffs</a></strong> a glorious egg-yellow colour.</p>



<p>Don’t worry, the agave in such a small amount won’t make your finished bake taste sweet.</p>

<h2 class="wp-block-heading">Option 3: Mustard &#8220;Eggwash&#8221;</h2>



<p>This is my no-egg &#8220;eggwash&#8221; of choice in this recipe for Masala Cheese Scones. Not only does it give the flaky scones another dimension of warmth, it turns the tops so beautifully golden.</p>



<p>If you choose to add any seeds to the top, this will also help them stick.</p>



<p>Simply mix together English mustard powder and warm milk. Brush this all over the top of the scones before you bake them.</p>



<h2 class="wp-block-heading">How to make light scones: Freeze and grate your butter!</h2>

<p>For the lightest and flakiest scones, pop your butter in the freezer for 30 minutes or so. Grate on the coarse side of a cheese grater to ensure it combines with the flour quickly and easily.</p>



<p>Like making shortcrust pastry, light and flaky scones require as little handling as possible. Every ingredient should be cold before you begin.</p>

Use a spoon or your hands to bring the mixture together as a soft dough. Be very gentle and do not knead it. <p>The batter for these dosas flows like a swooshing river of pouring cream. Splash it in a hot pan, rotating until it becomes as thin as a crepe — and then watch the surface transform into a corded lace-like dosa.</p>

<h2 class="wp-block-heading">What are Neer Dosa?</h2>



<p>Recipes for Neer Dosa vary from cook to cook, but the core ingredients are soaked rice, water and salt. Fresh coconut is abundant in South India and is commonly added for flavour.</p>



<p>I add coconut flavour to this dosa in the form of coconut milk. Vegetable Kurma is a curry I like to serve alongside Neer Dosa, so a splash of coconut milk from the same tin does the job perfectly for me.</p>



<p>Neer Dosa are a favourite in Tulu vegetarian cuisine is a treasured part of Mangalorean cuisine. It&#8217;s also known as Udupi cuisine which is rooted in Satvik traditions.</p>



<h2 class="wp-block-heading">Is it easy to make Neer Dosa?</h2>



<p>Being a non-fermented variety of dosa, it is relatively quick to prepare in comparison to other types of dosa.</p>

<h2 class="wp-block-heading">What type of rice is best for making Neer Dosa?</h2>



<p>Again, every cook has their own preference of what rice to use. I am UK based, so have experimented with the most commonly available types of rice here. Typically, a medium-short grain rice like Sona Masuri is popular for making Neer Dosa. It is grown largely in the Indian states of Andhra Pradesh and Karnataka and is known for its great fragrance and starchy qualities. However, it&#8217;s not a variety I can get my hands on easily where I live. Cue the Neer Dosa rice experiments.</p>

<h2 class="wp-block-heading">What if I don&#8217;t have special rice?</h2>



<p>After nine separate experiments using various varieties of rice, I found that both Idli rice and Thai Jasmine rice did a wonderful job in place of Sona Masuri. Having said this, I had good results using a standard American-style short-grain rice, too. Even 100% Basmati rice (250g) produced a good result for me (when I reduced the water content in my recipe by 50ml).</p>



<h2 class="wp-block-heading">What equipment do I need for making this recipe?</h2>

<h2 class="wp-block-heading">Neer Dosa: Troubleshooting</h2>

Use 250g Basmati rice and reduce the amount of water in the recipe to 400ml.</p> </div> <div class="schema-faq-section" id="faq-question-1589382728035"><strong class="schema-faq-question">My rice is still coarse after grinding &#8211; what should I do?</strong> <p class="schema-faq-answer">Grind it some more. Give your blender some breaks, too. I don&#8217;t want you to burn the motor out!</p> </div> <div class="schema-faq-section" id="faq-question-1589382775564"><strong class="schema-faq-question">My rice won&#8217;t grind because the batter seems too thick. Help!</strong> <p class="schema-faq-answer">Add a splash more water. Keep n eye on the amount of water you&#8217;re adding though. The best thing to do is measure out the water in a jug before you begin and only add water from there so as not to lose track of how much water has gone in. Be careful though as adding too much water to the blender can stop your rice from grinding finely.</p> </div> <div class="schema-faq-section" id="faq-question-1589382888868"><strong class="schema-faq-question">Can I use rice flour to make Neer Dosa?</strong> <p class="schema-faq-answer">Yes, but not using this recipe. Rice flour is super starchy and from my experience, diminishes the lacy appearance of the dosa when used in the context of my recipe. I&#8217;d need to test a separate recipe using rice flour.</p> </div> <div class="schema-faq-section" id="faq-question-1589383033671"><strong class="schema-faq-question">Can I use fresh or frozen coconut?</strong> <p class="schema-faq-answer">Yes, add 25g fresh coconut to this recipe in place of the coconut milk and increase the amount of water by 25ml.</p> </div> <div class="schema-faq-section" id="faq-question-1589383087530"><strong class="schema-faq-question">Can I use desiccated coconut?</strong> <p class="schema-faq-answer">Yes, but soak it along with the rice so that it doesn&#8217;t drink up all the water in the batter later.</p> </div> <div class="schema-faq-section" id="faq-question-1589383154469"><strong class="schema-faq-question">Why aren&#8217;t my Neer Dosa lacy?</strong> <p class="schema-faq-answer">Either your pan isn&#8217;t hot enough or your batter is too thick. Try increasing the heat or thinning out the batter with a splash of water.</p> </div> <div class="schema-faq-section" id="faq-question-1589383203545"><strong class="schema-faq-question">Why are my Neer Dosa cracking?</strong> <p class="schema-faq-answer">Either your pan isn&#8217;t hot enough or your batter is too watery. Try increasing the heat. Or add a small amount of soaked rice or rice flour and blending your batter again.</p> </div> </div>

Wash it in plenty of fresh water to remove any surface dirt. I changed the water 2-3 times. Drain well.</span></div></li><li id="wprm-recipe-21442-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cover the rice with plenty of fresh water, so there&#039;s about an inch of water above the surface of the rice. Allow to soak at room temperature for 2-3 hours.</span></div></li><li id="wprm-recipe-21442-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Drain the water from the rice.</span></div></li><li id="wprm-recipe-21442-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Place the rice in a high-powered blender (I used a NutriBullet). Add the coconut milk and 150ml water. Grind the rice to a very fine paste. You may need to start and stop a few times to give your blender a break (so the motor doesn&#039;t burn out). The mixture should be the texture of softly-whipped cream, with very few grains visible if you rub it between your fingers.</span></div></li><li id="wprm-recipe-21442-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Pour the mixture into a large bowl and add the remaining 300ml water and salt. Stir well. The batter should now be of a flowing consistency &#8211; it should look a bit like pouring cream.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">To cook the Neer Dosa:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-21442-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Heat a large, non-stick frying pan over a high heat. Rub the inside of the pan with a kitchen paper dabbed in oil.</span></div></li><li id="wprm-recipe-21442-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Give the batter a quick stir to ensure the rice and water hasn&#039;t separated. When the pan is smoking hot, carefully splash the dosa batter into the frying pan, tilting the pan as you go along for even spreading. Watch the video below to see how I do this. The dosa should be thin and will immediately begin to look lacy.</span></div></li><li id="wprm-recipe-21442-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cover with a lid and cook for 30-40 seconds. The dosa shouldn&#039;t brown. Don&#039;t flip the dosa &#8211; it should only cook on one side.</span></div></li><li id="wprm-recipe-21442-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove the lid and fold the dosa in half and then in half again so you have a neat little triangle-like shape. <p class="MsoNormal">I&rsquo;m yet to meet someone who doesn&rsquo;t bask in the crisp, flaky gloriousness of ghee-cooked paratha. They&rsquo;re like the classy, generous older sister of chapattis and perfect for scooping up rich curries and daals. You can glam them up any way you like; stuff them with spicy mashed potato, crushed peas, fresh paneer or grated vegetables. My personal favourite is peppery mooli (white radish), but I&rsquo;m also wild about plain flaky paratha including the ones that are made with fresh coconut milk, South Indian style.</p>
<p class="MsoNormal">These Jalebi Paratha get their name from the bright orange Indian sweets, Jalebi because of their beautiful coiled shape. To make Jalebi, first a batter is made with flour and yoghurt, which is piped directly into hot oil in coiled circle shapes to create a beautiful &lsquo;spider-web&rsquo;. The hot fritters are then lifted out of the oil and plunged into a hot sugar syrup spiced with cardamom and saffron until soaked through. They are served warm or cold at special occasions with &lsquo;gathia&rsquo;, long savoury snacks made with chickpea flour and ajwain seeds. The extreme crystallised sweetness and savouriness of these two dishes together creates a breakfast that will blow your mind.</p>
<p class="MsoNormal">Jalebi Paratha are made in the same vein as Jalebi as the dough is rolled into a spiral cone shape before being rolled out and cooked on a hot pan with ghee &ndash; which is the way my Nanabapu (maternal grandfather) used to make them for his clients as a chef in Nairobi, and then in the UK.</p>
<p class="MsoNormal">I hold this recipe and its stunning method for creating those layers of flaky goodness close to my heart because it&rsquo;s the way Nanabapu taught my mum, and then exactly the way my mum taught me. A technique passed down the generations and a skill Nanabapu would have wanted us to share with other paratha lovers. Think of it like making the simplest form of puff pastry; the layers need to be created with plenty of ghee in between, then the dough should be left in the fridge for at least an hour before rolling out, to ensure the layers are trapped and marbled with ghee.</p>

<p class="MsoNormal">I like to serve these with lots of different dishes including Mung Daal (recipe coming up in my next post), Daal Makhani and Paneer Butter Masala.</p>
<p class="MsoNormal">Note: If you&rsquo;re counting the calories, paratha aren&rsquo;t going to be your best friend. I think that for that amazing flavour, they need to be cooked with ghee. However, you can combine one part ghee, one part groundnut oil at all points ghee is used in this recipe if you must.<span style="mso-spacerun:yes">&nbsp; </span></p>

Makes 10</p>
<p class="MsoNormal"><strong>Ingredients</strong></p>
<p class="MsoNormal">420g chapatti flour, plus more for rolling<br />
30g ghee, melted plus more for rolling and cooking<br />
Pinch of salt<br />
220ml boiling water</p>
<p class="MsoNormal"><strong>Method</strong></p>
<p class="MsoNormal">1. Place the flour and salt in a bowl and combine. Make a well in the centre and add 30g melted ghee and the boiling water.</p>
<p class="MsoNormal">2. Bring together using a spoon until cool enough to handle. Next, knead the dough until smooth, about five minutes.</p>
<p class="MsoNormal">3. Divide the dough into ten equal pieces cover with a damp tea towel. Follow my instructions below to roll out the dough below or use my illustrated step-by-step tutorial.</p>

<p class="MsoNormal">4. Take one piece of dough and roll it to a five inch circle. Using a sharp knife, make a cut from the middle to the outside edge. Take a teaspoon of melted ghee and spread over the surface of the dough. Take a pinch of flour and sprinkle over the ghee. Lifting from the slit you made, roll the dough into a spiral cone shape. Use the palm of your hand to flatten the cone &ndash; spiral layer side up. Repeat for each dough ball and then place them all on a tray. Cover with cling film and refrigerate for an hour. You can do this up to a day in advance.</p>
<p class="MsoNormal">5. Remove from the fridge and on a lightly-floured board, roll out one piece of dough to a six inch circle, spiral side up. Place the paratha in a hot non-stick pan and cook each side until lightly golden. Finally, spread each side with a little ghee. This will help give your paratha the perfect, crispy finish. Remove from the heat and wrap the paratha in a tea towel and lightly scrunch it up for ultimate flakiness. Repeat this process for each dough ball. Serve immediately.</p>
