<p>These Vegan Lemon Meringue Cupcakes are fluffy, tender, moist and SO delicious! I&#8217;m sorry for using the &#8220;M&#8221; word. I&#8217;m told it&#8217;s okay when you&#8217;re talking about cake.</p>



<p>When it comes to baking, the more lemon that&#8217;s involved, the better as far as I&#8217;m concerned. I&#8217;ve never met anyone who didn&#8217;t go weak at the knees for a slice of lemon drizzle cake or three. Have you?</p>

<h2 class="wp-block-heading">Why is Lemon &amp; Saffron such a great flavour combo?</h2>



<p>One of my favourite flavour combinations has to be lemon and saffron. The humble, sharp lemon against the heady fragrance of saffron is such a winner. Whether you&#8217;re cooking something sweet or savoury, the two ingredients together are the perfect marriage of colour, taste and aroma. </p>



<p>Sweet is most certainly my preference because once baked, they mingle with the smell of toasty flour and fill the house with the most gorgeous baking scent. It&#8217;s pure and strong, unlike if you were making a savoury dish with 10 other spices.</p>



<p>In the past, I&#8217;ve successfully combined the two to make <a href="https://staging.sanjanafeasts.co.uk/2010/08/saffron-lemon-srikhand-cheesecake">cheesecakes</a> and <a href="https://staging.sanjanafeasts.co.uk/2014/10/hot-saffron-and-lemon-seeroh-with-pistachio-ice-cream">seeroh (sweet semolina)</a> which were both delicious. This time, I wanted to give a simple cupcake recipe a special makeover. They&#8217;re light, fluffy and so moreish.</p>



<h2 class="wp-block-heading">How to make vegan lemon curd</h2>



<p>Each fluffy sponge is filled with a golden-hued saffron lemon curd which I veganised with cornflour, coconut oil and coconut milk in place of eggs and butter. Use unrefined coconut oil to ensure the flavour of coconut doesn&#8217;t overpower the rest of the ingredients. It&#8217;s the saffron that gives it a pretty daffodil colour. If you have any leftover lemon curd, pop it in a jar and spread it on toast or scones for a special tea-time treat. It really is spectacular.</p>

<h2 class="wp-block-heading">The best Vegan Lemon Meringue Cupcakes</h2>



<p>These Vegan Lemon Meringue Cupcakes are a little riff on the <a href="https://staging.sanjanafeasts.co.uk/2018/09/sanjanas-fluffy-eggless-vanilla-cupcakes">Vanilla Birthday Cupcakes</a> I posted a while back. It&#8217;s a straightforward one using almond buttermilk to give the cupcakes lift. <p>The meringue might seem daunting at first. However, once you have all your ingredients laid out in front of you, it&#8217;s very simple. You&#8217;ll need a stand mixer with a whisk attachment or robust electric hand beaters to get that meringue whipped up perfectly. Reducing the <a rel="noreferrer noopener" aria-label="aquafaba (opens in a new tab)" href="http://aquafaba.com/history.html" target="_blank">aquafaba</a> and adding agar-agar will give it more stability and the cream of tartar and sugar will help it whip into a sweet cloud of fluffiness. I used a kitchen blowtorch to toast the tops but if you don&#8217;t have one, you can pop them under the grill for a 15-20 seconds — just be sure to remove the cupcakes from their paper cases first!</p>



<p>These are perfect for parties, bake sales and for when you just want to eat a cupcake or three, alone, on your kitchen floor.</p>

Cook over a medium heat, whisking all the time until the mixture has thickened to the consistency of custard. The saffron will start to turn the lemon curd a beautiful shade of daffodil yellow. Remove from the heat and allow to cool slightly.</span></div></li><li id="wprm-recipe-20004-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once the lemon curd has cooled for 10 minutes, directly cover the surface with cling film to stop a hard skin forming. Refrigerate until needed.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For the vegan cupcakes:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-20004-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mix together the almond milk and lemon juice in a jug. Allow to stand for ten minutes, until slightly thickened. Stir in the oil.</div></li><li id="wprm-recipe-20004-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a large bowl, whisk together the cake flour, caster sugar, cornflour, baking powder, salt and lemon zest.</div></li><li id="wprm-recipe-20004-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour the milk mixture into the dry ingredients and beat with a whisk for 1-2 minutes, until you have a smooth batter.</div></li><li id="wprm-recipe-20004-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour or scoop the batter into the paper cupcake cases, filling to about ¾ of the way up. Give the base of the tin a quick succession of taps on the work surface to remove any large air bubbles.</div></li><li id="wprm-recipe-20004-step-2-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place the tin into the pre-heated oven and bake for 18 minutes, or until golden on top and springy to the touch. Remove from the oven and allow to cool completely.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For the vegan meringue:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-20004-step-3-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">To make the meringue, place the reduced and chilled aquafaba in a clean stand mixer fitted with a whisk attachment. Add the cream of tartar and whisk on high speed for 3-4 minutes until frothy.</div></li><li id="wprm-recipe-20004-step-3-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Combine the water, sugar, agave, vanilla and agar-agar in a saucepan and mix until dissolved. Cook over a medium heat, stirring often to stop the syrup catching and burning at the base of the pan. Use a sugar thermometer to check the temperature of the syrup. Once the syrup reaches 120°C/250°F, remove it from the heat and quickly pour it into the still running bowl of the stand mixer. Whisk the mixture for 15 minutes until white and meringue-like in texture.</div></li><li id="wprm-recipe-20004-step-3-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Use a spoon to remove the centres from the cooled cupcakes and pipe or spoon 2 teaspoons of the chilled lemon curd into the centre. Fill top of the plug with a few cake crumbs.</div></li><li id="wprm-recipe-20004-step-3-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fill a piping bag fitted with a large, round tip with the meringue mixture. Pipe the meringue on to the cupcakes. I chose to do a simple pillowy blob but you can also use a star piping tip if you like. If you don’t have a piping bag, you can also spoon the meringue on top.</div></li><li id="wprm-recipe-20004-step-3-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">For a toasted finish, use a kitchen blowtorch to toast the tops of the meringues before serving. I do not recommend placing the cupcakes under a grill when using paper cases. If you don’t have a kitchen blowtorch and would like to toast the meringue, consider using grill-safe silicone cupcake cases.</div></li><li id="wprm-recipe-20004-step-3-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Storage: Keep these cupcakes covered and at room temperature for up to 24 hours. Storing them in the refrigerator may cause the meringue to weep liquid and deflate.</div></li></ul></div></div>

<h2 class="wp-block-heading">Vegan Cake FAQ</h2>



<div class="schema-faq wp-block-yoast-faq-block"><div class="schema-faq-section"><strong class="schema-faq-question"><strong>Is there a single egg replacer that works for all vegan baking recipes?</strong></strong> <p class="schema-faq-answer">There’s not a one-size-fits-all answer as the techniques and make-up of different bakes all require different approaches and ingredients. E.g. Mashed banana, flax eggs, chia eggs, psyllium husk and applesauce are fine for vegan bakes like banana cake, dense muffins and crumb cake but they don’t work so well in light vanilla cakes. The vegan cake would end up tasting of those ingredients rather than having the light, white, fluffy texture we all want in a good vanilla cake. I also tend to stay away from using these in vanilla cake baking because the results can be a bit too unpredictable.</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>Can I swap the sugar in the recipe for honey/coconut sugar/agave/sweetener? Can I reduce the amount of sugar in the recipe?</strong></strong> <p class="schema-faq-answer">No. Sugar helps proteins bind and form a good structure in cakes. In the absence of eggs, sugar plays a vital role in binding proteins, forming a good crumb and holding the cake together. Using liquid-based ingredients like honey will change the texture of final cake. Coconut sugar and sweetener have a different make-up to regular sugar too and swapping them in place of sugar will also change the final result of the vegan cake.</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>My eggless cake is tough. Where did I go wrong?</strong></strong> <p class="schema-faq-answer">Overworked batter can produce a dense, tough cake. This is the case with all cakes, not just the vegan kind. If you overbeat cake batter, the in the flour gluten develops to unwanted levels and this will result in tough, stodgy vegan cakes.</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>Can I swap the white cake flour for wholemeal flour?</strong></strong> <p class="schema-faq-answer">Technically yes, you could. Having said this, your vegan cake will be darker in colour and heavier than if you were to use a refined white flour. I’ve found that extra-fine self-raising sponge flour produces the best results by a country mile if you’re looking for a fluffy, white vegan cake.</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>My cakes are dry. Where did I go wrong?</strong></strong> <p class="schema-faq-answer">They are overbaked. Ensure you’re baking it for the stated time at the correct temperature. Most domestic ovens tend to be a few degrees out but an internal oven thermometer can help ensure your oven is set at the right temperature. If you don’t have an internal oven thermometer you could also increase or reduce the cooking time depending on whether your cake is over baking or under baking</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>Can I add cocoa powder to make this a chocolate cake?</strong></strong> <p class="schema-faq-answer">In vegan cakes, an oil-based batter will result in a moist, fluffy cake. I’ve found that using butter results in a much firmer cake with a larger crumb.</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>Why does the plant milk need to be at room temperature?</strong></strong> <p class="schema-faq-answer">Room temperature milk will ensure the milk and vinegar mixture curdles quickly and adequately. If you’re short of time, microwave cold milk from the fridge on high power in 15 second intervals for a total of 30 seconds, stirring in between.</p> </div> <div class="schema-faq-section"><strong class="schema-faq-question"><strong>Why add the additional baking powder if you’re using self-raising flour?</strong></strong> <p class="schema-faq-answer">After a lot of testing, I’ve found the extra leavening from the baking powder gives the vegan cupcakes an extra lift for a super fluffy result.</p> </div> </div>

<p>I was so desperate to get my mitts on them, I immediately went on a mango hunt after leaving work on Friday. Stepping into the Indian shop closest to my London train station, my eyes darted from shelf to shelf. There were rows upon rows of lentils, spices and green vegetables, but alas, there was not a mango in sight. My heart sank.</p>
<p>As I meandered through the tiny, yet unfathomably packed shop, my nostrils filled with the smell of ajwain, dried turmeric, fenugreek… and then finally, the sweetest scent of fresh mango. There they were, a pile of mango boxes lying in wait like treasure in Aladdin’s cave, except better.</p>
<p>I pounced on them faster than Shere Khan on Mowgli, the man child in Rudyard Kipling’s Jungle Book. As usual, the two mango varieties were Alphonso and Kesar. When given the choice, I get Alphonso. They have more fragrance and a super-lush orange colour.</p>
<p>They were only sold in boxes of twelve so I got the whole lot. The only glitch was that I had to carry the entire box back home. The entire train carriage was filled with the heavenly scent of fresh mango – a welcome change from the stench of somebody’s hot Burger King dinner *<strong>shudder</strong>*. You’re welcome, fellow commuters. You’re welcome.</p>
<p>After eating three of twelve mangoes, I figured I better whip up one of my favourite desserts before they all disappear. This egg-free Alphonso Mango Pavlova Cheesecake is a true showstopper.</p>
<p>It’s a malted milk biscuit base, sweet mango and vanilla mascarpone cheesecake filling topped with eggless pavlova, fresh cream and all your favourite fruit. This pavlova cheesecake is rich, decadent and unashamedly two of the most awesome desserts ever stacked to make one epic masterpiece.</p>
<p>If you’re a lover of Indian Alphonso mango, this is a glorious way of celebrating it.</p>
<p>Here’s how I did it.</p>

Serves 12-14</p>
<p><strong>Ingredients</strong></p>
<p><strong>For the pavlova layer:</strong><br />
1 x 400g tin chickpeas in water (left in the fridge overnight)<br />
280g golden caster sugar<br />
<span style="line-height: 1.73;">1 tsp apple cider vinegar<br />
</span><span style="line-height: 1.73;">½ tsp arrowroot or cornflour<br />
</span><span style="line-height: 1.73;">3 tsp vanilla extract</span></p>
<p><strong>For the cheesecake base:</strong><br />
<span style="line-height: 1.73;">260g malted milk biscuits (you could use ginger biscuits or NICE biscuits too)<br />
</span><span style="line-height: 1.73;">100g unsalted butter, melted</span></p>
<p><strong>For the Alphonso mango cheesecake filling:</strong><br />
<span style="line-height: 1.73;">500g mascarpone cheese<br />
</span>300g full fat cream cheese (I used Philadelphia)<br />
<span style="line-height: 1.73;">200ml double cream + 100ml extra<br />
</span><span style="line-height: 1.73;">450g icing sugar<br />
</span><span style="line-height: 1.73;">Juice of 2 lemons<br />
</span><span style="line-height: 1.73;">2 tsp vanilla extract<br />
</span><span style="line-height: 1.73;">300g Alphonso mango, blended (this was approx. 3 mangos for me)<br />
</span><span style="line-height: 1.73;">2 tbsp agar agar powder</span></p>
<p><strong>For the decoration:</strong><br />
<span style="line-height: 1.73;">Whipped cream<br />
</span><span style="line-height: 1.73;">Mixed fruits of your choice (I used more mango, kiwi, strawberries, grapes, physalis, blackberries and figs)</span></p>
<p>You will also need a 24cm spring form tin.</p>
<p><strong>Method</strong></p>
<p>1. First, you’ll need to make the pavlova. Preheat the oven to 120C.</p>
<p>2. Take a piece of non-stick baking parchment and draw a circle on it, using the removable base from your cake tin. Flip the paper over and place it on a large baking tray. You now have the perfect outline for your pavlova.</p>
<p>3. Drain the can of chickpeas and reserve the water. Put the chickpeas in a container and use it to make Channa Masala or Hummus later.</p>
<p>4. Pour the chickpea water and vinegar into the bowl of an electric stand mixer fitted with the balloon whisk attachment. Make sure your bowl is really clean and grease free. Any oil could cause your meringue to deflate.</p>
<p>5. Whisk on a high speed for 4 minutes. Mix together the sugar and cornflour. Gradually add the sugar mixture a tablespoon at a time and continue to beat until you have stiff glossy peaks. Congratulations, you’ve just made your own vegan marshmallow fluff! But right now, we’re making pavlova.</p>
<p>6. Dollop the meringue mixture onto the piece of baking paper, staying inside the circle you traced. Even it out using the back of a spoon, creating a little crater in the middle for your cream and fruit later. I like to keep it looking craggy and rustic so don’t fuss over it looking too perfect.</p>
<p>7. Place into the middle shelf of the oven and immediately turn the heat down to 100C. Bake for 2 hours 30 minutes. Once this time is up, crack the oven door open a little and leave it to cool completely. You’ll then be able to peel it away from the non-stick paper.</p>
<p>8. Next, make the cheesecake base. Blitz the biscuits in a food processor until they resemble the texture of sand. Stir in the melted butter. Press into the base of the tin, making sure it’s even and packed tightly. Refrigerate for 30 minutes.</p>
<p>9. To make the cheesecake filling, beat together the mascarpone, cream cheese, 200ml double cream, vanilla, icing sugar and lemon juice. Don’t overwork it.</p>
<p>10. Place the agar agar in a small bowl. Add 2 tbsp cold water and stir to dissolve. In a small saucepan, combine the agar agar and 100ml double cream. Heat gently, stirring all the time until the mixture comes to a boil. You will notice it will begin to thicken. Boil for a minute or so and then switch off the heat. Add the mango pulp and stir to combine. This will lower the temperature of the cream mixture.</p>
<p>11. Add the mango mixture to the cream cheese mixture and whip until fully combined. It should thicken very slightly.</p>
<p>12. Pile the cheesecake filling onto the cooled biscuit base and smooth out the top.</p>
<p>13. Cover tightly and refrigerate overnight.</p>
<p>14. To serve, run a knife around the edge of the cheesecake and remove the sides of the tin. Place onto a cake plate or stand and place the pavlova on top. Fill the crater in the middle with whipped cream and fresh fruit. I recommend more mango, obviously.</p>
<p>Devour immediately.</p>
<p>Note: Wrap your cooled pavlova in foil overnight to ensure it stays crisp for serving the next day.</p>

										<content:encoded><![CDATA[<p>Ever since I was a little girl I’ve been fascinated by meringues. There’s something so magical about those white, fluffy clouds of sweet vanilla. The chewy goodness of pavlovas, with their marshmallow-like middles and cratered tops that are begging to be dolloped with whipped cream and crowned with berries.</p>
<p>So beautiful, yet nigh on impossible without egg whites which somehow, when whipped up, have&nbsp;more volume than Claudia Schiffer’s barnet in a L&#8217;Oréal Elnett ad.</p>
<p>Well that’s what I always thought… until now.</p>

<p>The protein in egg whites allows the air bubbles created by lots of&nbsp;whipping to be held. Sugar dissolves into these proteins and bonds with them. The water in sugar helps increases their strength and elasticity, allowing even more air to be trapped and held sturdy. There’s nothing quite like a stiff peak.</p>

<p>Without the strong proteins present in egg whites to kick the meringue process off, all you’re left with is sugar. What can vegans and those who abstain from eating eggs use instead? Fear not, we no longer need to be oblivious to the sheer joy desserts like Eton Mess, French Macarons and Pavlova can bring.</p>
<p>Want to know the most frustrating thing about all of this? The answer has been staring us in the face the whole time.</p>
<p>The secret to replacing egg whites is chickpea water. Nope, I haven’t lost the plot. It really is the water we throw down the drain when we’re making our Channa Masala and Falafel. I almost slapped myself across the face when I found out. Mind. Blown.</p>

<p>I stumbled upon the chickpea water trick through my awesome, creative mum and later, the&nbsp;<a href="http://aquafaba.com/">aquafaba website</a> which was created off the back of a development group of <a href="https://www.facebook.com/groups/VeganMeringue/">very clever vegans on Facebook</a>. It’s taken the vegan world by storm. From Lemon Meringue Pie to Baked Alaska, this makes almost every meringue-based dessert possible and I can’t wait to try more recipes with it. And share them with you, of course.</p>
<p>BTW, you can’t taste chickpeas in the finished dessert AT ALL. Not one bit.</p>
<p>My first flavour experiments led me to create these very simple Vegan Saffron, Strawberry and Lime Meringue Nests. They’re beautifully-crisp on the outside, slightly spongy and marshmallowy in the middle and they totally melt in your mouth.</p>

<p>The chickpea water is whipped with cream of tartar, saffron and sugar until stiff and glossy. This takes about 8 minutes in a stand mixer. So quick.</p>
<p>Many meringue recipes call for vinegar, lemon juice, or cream of tartar to increase the foam’s acidity, which promotes the growth and stability of a meringue. You can use any of them.</p>
<p>These are then piped onto a baking sheet and baked in a very low oven for a few hours until they’re totally dry and peel away from the paper easily. The key here is patience. Give these beauties time.</p>
<p>While they were baking, I macerated strawberries in lime juice, zest and a touch of icing sugar. To assemble, I filled them with whipped coconut cream and topped with the strawberries. I love strawberry mojitos and these are like a gorgeously-tall glass of iced strawberry mojito in dessert form.</p>

<p>You can use this recipe to make a large pavlova too – just add a teaspoon of cornflour to the meringue mixture and bake for 90 minutes longer.</p>

<p><strong>Vegan Saffron, Strawberry and Lime Meringue Nests</strong><br />
(Makes 18 nests or one super large pavlova)</p>
<p><strong>Ingredients</strong></p>
<p><strong>For the Vegan Meringue:</strong><br />
1 x 400g tin chickpeas in water –not brine or salted water (you can also use other white beans – butter beans also worked for me)<br />
140g icing sugar<br />
1 tsp cream of tartar<br />
<span style="line-height: 1.73;">1 large pinch of saffron<br />
</span><span style="line-height: 1.73;">½ tsp vanilla extract (make sure it’s not oil based!)<br />
</span><span style="line-height: 1.73;">Yellow gel food colour (optional)&nbsp;</span></p>
<p><strong>For the Strawberries:</strong><br />
600g strawberries<br />
1 lime, juice and zest<br />
1 tbsp icing sugar</p>
<p><strong>For the Whipped Coconut Cream:</strong><br />
2 x 400ml full-fat coconut milk, refrigerated overnight<br />
2 tbsp icing sugar</p>
<p><strong>Method</strong></p>
<p>1. Preheat the oven to 100C. Line three large baking trays with greaseproof paper.</p>
<p>2. Drain the chickpeas and reserve the water. Put the chickpeas in a container and use it to make Channa Masala or Hummus later.</p>
<p>3. Pour the chickpea water into the bowl of an electric stand mixer fitted with the balloon whisk attachment. Make sure your bowl is really clean and grease free. Any oil could cause your meringue to deflate.</p>
<p>4. Whisk on a high speed for 4 minutes. Gradually add the sugar and continue to beat. During this time, add the cream of tartar, vanilla and saffron. Once your meringues have reached a really stiff glossy peak stage, add a little bit of yellow food colour if you like. Whip until evenly incorporated.</p>
<p>5. Fit a piping bag with a large star-tipped nozzle and spoon in your meringue. You might have to do it in batches if it doesn’t fit. Shake to remove any large air pockets.</p>
<p>6. Pipe into nests by piping a 3-inch round spiral base, then pipe two to three circles on top of the outer edge of the base, spiraling upwards to create a ‘nest effect’ on the edge of the meringue.</p>
<p>7. Bake at 100C for 2 ½ hours, then switch the oven off and leave for a further hour. Remove from the oven and gently peel the meringues away from the greaseproof paper. They should be totally dry underneath. Remember, the larger the meringues, the longer they will take to bake.</p>
<p>8. Meanwhile, chop the strawberries any which way you like. Add the lime juice, zest and sugar. Mix and cover with cling film. Chill until later.</p>
<p>9. Open the tins of coconut milk (don’t shake them first) and remove the thick cream from the top. Place it in the bowl of your stand mixer and whip along with the sugar until smooth. Reserve the water for a smoothie tomorrow morning.</p>
<p>10. Assemble the nests with a spoonful of coconut cream, top with strawberries and lime zest. Serve immediately.</p>
<p>The plain meringue nests will keep in an airtight container for 3-4 days.</p>

<p>Rich, luxurious caramel with a pinch of sea salt reminds me of the gooey-centered masterpieces I overindulged on in my favourite Parisian chocolateries some years ago. These days, whenever I hear the words ‘salted caramel’, my ears prick up like a meerkat on predator watch. And because it’s become so popular, this happens often.</p>
<p>In this recipe, I’ve paired salted caramel with toasted sesame seeds, dark chocolate and a touch of coconut oil. Trust me when I say this flavour combo will take you straight to heaven.</p>
<p>Nutty sesame seeds are ground and added into the biscuit base before being topped with a ridiculously-generous amount of salted caramel blended with coconut oil. The caramel is then set and crowned with sesame oil-spiked dark chocolate.</p>
<p>Be sure to line your tin with plenty of greaseproof paper and groundnut oil to make sure they don’t stick. Try to chill overnight and cut with a super-sharp and hot knife.</p>
<p>The deep, nutty flavours make these bars the perfect after-dinner treat with a shot of espresso. Just be sure to cut them into small cubes. I love them as an afternoon pick-me-up with a glass of cold milk.</p>
<p>If you love the combination of peanut butter and chocolate, you need to try the marriage that is sesame and chocolate. Forget Reese’s Cups and plain old Millionaire’s Shortbread. These will blow your mind.</p>

<p><strong>Salted Sesame Caramel Bars</strong><br />
Serves 16<br />

<p><strong>Ingredients</strong></p>
<p>For the biscuit base:<br />
200g plain flour<br />
<span style="line-height: 1.73;">30g toasted sesame seeds, ground<br />
</span>150g unsalted butter<br />
<span style="line-height: 1.73;">100g light brown sugar</span></p>
<p>For the caramel filling:<br />
2x 397g tins sweetened condensed milk<br />
<span style="line-height: 1.73;">130g golden syrup<br />
</span><span style="line-height: 1.73;">125g coconut oil<br />
</span><span style="line-height: 1.73;">1 tsp sea salt</span></p>
<p>For the chocolate layer:<br />
200g dark chocolate<br />
<span style="line-height: 1.73;">1 tbsp toasted sesame oil<br />
</span><span style="line-height: 1.73;">Toasted sesame seeds, to sprinkle (optional)</span></p>
<p><strong>Method</strong></p>
<p>1. Combine the flour, ground sesame seeds, brown sugar and melted butter. Press into a greased and lined 6-inch by 9inch tin. Bake in a preheated oven at 180C for 20 minutes.</p>
<p>2. While the biscuit base cooks, make the caramel. Combine the condensed milk, golden syrup and coconut oil. Cook until very lightly-golden and slightly thickened. Add the sea salt and set aside.</p>
<p>3. Remove the biscuit base from the oven and pour over the caramel. Allow to set at room temperature until cool. Place in the fridge for 2 hours or until the caramel has set.</p>
<p>4. Melt the chocolate over a double boiler and stir in the toasted sesame oil. Allow to cool slightly and pour over the set caramel. You can sprinkle over some toasted sesame seeds if you like but I love a smooth, shiny top. Return to the fridge to set for 4 hours or overnight.</p>
<p>5. Slice into bars or pieces as large as you can handle. The recipe makes approx. 16 squares.</p>

	I used to love going into Indian sweet shops as a little nipper, especially around Diwali. Wide-eyed and full of wonder, the shop keepers would see me peering through their glass cases at the majestic displays of endless halwa, burfi, penda, jalebi, kaju katli, mohanthal gulab jambu, rasmalai and everything in between. I very quickly became an expert at getting free samples.
</p>
<p>
	<span style="line-height: 1.6em;">My dad would always ask me what I&rsquo;d like in my special box of sweets. I&rsquo;d think long and hard about which ones would make the cut &ndash; it was a very important decision. To this day, he still buys me my own box of sweets and even if I&rsquo;m not there to choose them, he somehow always picks my favourites.</span>
</p>
<p>

	<span style="line-height: 1.6em;">The one that always stood out was the Bombay Halwa. It&rsquo;s one of the only sweet that comes in lots of different colours &ndash; and they&rsquo;re SO bright. Rows of translucent pink, yellow, green and orange jellies studded with jewel-like pistachios and cashews. They were bright and beautiful and I was a magpie, attracted to anything colourful.</span>
</p>
<p>
	<span style="line-height: 1.6em;">For me, it was always the pink ones. As an avid fan of C.S. Lewis&rsquo;s The Lion, The Witch and the Wardrobe, it reminded me of the White Witch&rsquo;s wicked Turkish delights that were conjured up to encourage Edmund&rsquo;s betrayal. Of course, the only things I betrayed were my poor teeth. It was so worth it.</span>
</p>
<p>
	<span style="line-height: 1.6em;">I learnt much later that Bombay Halwa is really easy to make. The jelly-like texture is achieved by mixing cornflour and sugar syrup &ndash; very much like making Turkish delight. Next, you slowly add ghee until it&rsquo;s glossy and thick. And that&rsquo;s pretty much it. So simple but make sure your arm muscles are ready. There&rsquo;s loads of stirring involved.</span>
</p>
<p>
	<span style="line-height: 1.6em;">You can make pretty much any flavour or colour you like. I love rose and pistachio but saffron and cashew and simple lemon and cardamom are also great.</span>

<p>
	<span style="line-height: 1.6em;"><strong>Pistachio and Rose Bombay Halwa</strong></span><br />
	<span style="line-height: 1.6em;">Makes 18-20 pieces</span>
</p>
<p>
	<strong>Ingredients</strong><br />
	<span style="line-height: 1.6em;">160g cornflour</span><br />
	<span style="line-height: 1.6em;">140ml water</span>
</p>
<p>
	400g sugar<br />
	250ml water</p>
<p>	4 tbsp rose syrup<br />
	100g ghee, melted<br />
	<span style="line-height: 1.6em;">50g roasted pistachios, lightly broken</span><br />
	<span style="line-height: 1.6em;">&frac12; tsp cardamom seeds, ground</span>
</p>
<p>
	<strong><span style="line-height: 1.6em;">Method</span></strong>
</p>
<p>
	1. Grease a 6&#215;8 rectangular tin with ghee.
</p>
<p>
	2. First, mix together the cornflour and 140ml cold water.
</p>
<p>
	3. In a large pan (I use a wok with a large handle), add the sugar and 250ml water. Bring to the boil and wait for all the sugar to melt.
</p>
<p>
	<span style="line-height: 1.6em;">4. Once all the sugar has melted, in a slow and steady stream, add the cornflour mixture, stirring all the time. Keep the mixure boiling all the time and keep stirring. It will thicken and look a lot like wallpaper paste.</span>
</p>
<p>
	<span style="line-height: 1.6em;">5. When you&rsquo;ve added all the cornflour mixture, add the rose syrup.</span>
</p>
<p>
	<span style="line-height: 1.6em;">6. Next, start adding the ghee &#8211; slowly at first. Keep stirring to ensure there are no lumps. Then add the rest of the ghee and incorporate. Cook again, mixing all the time until thick, glossy and translucent.</span>
</p>
<p>
	<span style="line-height: 1.6em;">7. Mix in&nbsp;the cardamom and pistachios.</span>
</p>
<p>
	<span style="line-height: 1.6em;">8. Pour the mixture into the greased pan, decorate with crushed pistachios and allow to set at room temperature for 12 hours or overnight.</span>
</p>
<p>
	<span style="line-height: 1.6em;">9. Cut into pieces as big as you can fit in your mouth.</span>

I once had a tragic experience with Death by Chocolate Cake. I begged and begged for it until my parents gave in, probably knowing I&rsquo;d regret it the next day. Needless to say, it did exactly what it said on the box. I didn&rsquo;t look at another cake for a very long time.</span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">These days, I prefer my cakes with far less sugar&hellip; but still packing heaps of chocolate.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">There&rsquo;s nothing better than the marriage between intense chocolate sponge and subtle chai spices. This four-layer cake stays super moist because the sponge is soaked with a little bit of dark rum. If you don&rsquo;t want to use rum, you can use a bit of gingerbread syrup (like the kind you add to coffee) or just leave it out. As the layers are thin, the buttercream will do a great job of keeping it moist.</span></span>
</p>

	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">For a rich chocolate kick, two teaspoons of good-quality instant coffee works a treat. The slight bitter notes make the chocolate flavour big, punchy and powerful.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">If you&rsquo;ve never tried Biscoff&hellip; Well, where the hell have you been?! Essentially, it is crushed Speculoos (spiced) biscuits made into a creamy spread the consistency of Nutella. Spread it on toast, pancakes and use it to make the buttercrean for this cake. Btw, it&rsquo;s 100% vegan &ndash; magic!</span></span>
</p>

	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">I&rsquo;ve spent many years trying to perfect the vegan sponge and the only one I can say I&rsquo;m truly proud of and can always depend on is this chocolate cake. The use of white vinegar, oil and cocoa powder creates an even lift and remains moist without the use of eggs.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">With hundreds of books on French p</span></span><span style="color: rgb(0, 0, 0); font-family: arial, helvetica, sans-serif; font-size: 13px; line-height: 17px;">&acirc;</span><span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">tisserie &ndash; my favourite subject after savoury vegetarian cooking, I&rsquo;ve committed so many hours trying to replicate the classics without using eggs, butter, milk and cream. Sometimes it&rsquo;s with great success&hellip; but usually it ends in disaster. My vegan/eggless pastry chef life is sort of a work in progress I don&rsquo;t like to talk about too often &ndash; and with good reason.&nbsp;</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;"><strong>Darkest Ever Vegan Chocolate Cake with Biscoff and Chai-Spiced Buttercream</strong></span><br />
	<span style="line-height: 1.6em;">Serves 10-12</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;"><strong>Ingredients for the sponge:</strong></span></span>
</p>
<p>
	<span style="line-height: 1.6em;">450g plain flour</span><br />
	<span style="line-height: 1.6em;">100g good-quality cocoa powder</span><br />
	<span style="line-height: 1.6em;">2 tsp baking powder</span><br />
	<span style="line-height: 1.6em;">1 tsp bicarbonate of soda</span><br />
	<span style="line-height: 1.6em;">1 tsp salt</span><br />
	<span style="line-height: 1.6em;">300g caster sugar</span><br />
	<span style="line-height: 1.6em;">100ml vegetable or sunflower oil</span><br />
	<span style="line-height: 1.6em;">500ml cold water</span><br />
	<span style="line-height: 1.6em;">2 tsp instant coffee</span><br />
	<span style="line-height: 1.6em;">2 tsp white vinegar</span><br />
	<span style="line-height: 1.6em;">2 tbsp dark rum to soak the sponges (optional)</span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><strong>Ingredients for the buttercream:</strong></span>
</p>
<p>
	250g soy margarine<br />
	300g crunchy Biscoff spread<br />
	2 tbsp icing sugar<br />
	2 tsp chai spice
</p>
<p>
	Popcorn, toasted hazelnuts and Carnation Caramel (onit if vegan) to decorate
</p>
<p>
	<strong>Method</strong>
</p>
<p>
	<span style="line-height: 1.6em;">1.&nbsp;Pre-heat the oven to 160 degrees C. Grease and line a 8-inch wide X 3-inch deep cake tin.</span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">2. In a large bowl, sift together the flour, cocoa powder, baking powder, bicarbonate of soda and salt.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;">3. In a separate bowl or a stand mixer, whisk together the sugar, oil, water, coffee and vinegar until fully combined, about 5 minutes.</span>
</p>
<p>
	4. Gently fold in a third of the dry ingredients. Don&rsquo;t worry if there are a few lumps. Next, fold in the remaining two thirds of the dry ingredients. Beat with a whisk until very few lumps remain, about 1 minute. Do not over mix it.
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">5. Pour the cake mix into the cake tin and bang the bottom of the tin on a work surface to ensure any bubbles come to the surface. This will ensure an even rise.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">6. Bake the cake in the oven for 50 minutes or until a skewer poked into the centre of the cake comes out clean. It&rsquo;s important you don&rsquo;t open the oven for the first 40 minutes of cooking.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">7. Once baked, remove the cake from the oven and allow to cool in the tin for 10 minutes.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">8. After 10 minutes, run a knife around the edge of the cake and carefully turn out onto a wire rack. Allow to cool fully, preferably overnight. Cover loosely.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">9. To make the buttercream, beat the vegan margarine until light, pale and fluffy. Next, beat in the Biscoff, chai spices and icing sugar. Beat again until super fluffy. About 10 minutes.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">10. To assemble to cake, remove the baking paper from under the cake and using a cake wire, cut the sponge into four even layers. At this point you can soak each sponge with dark rum, if using.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">11. Place your first sponge on a cake plate and using an ice cream scoop, take four level scoops of your buttercream. Spread evenly and top with your next sponge. Repeat for all of the sponges and finally, top the cake with the remaining buttercream.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;"><span style="line-height: 1.6em;">12. Scatter over the popcorn and caramel if using. If you don&rsquo;t want to use caramel, you can used melted dark chocolate.</span></span>
</p>
<p>
	<span style="font-family:arial,helvetica,sans-serif;">13. Cut into slices and serve with a cuppa chai.&nbsp;</span>
</p>

<p>I’ve been rushing around like a mad woman on too many <em>jalebis</em> this month. Developing recipes (which I’ll show you later), catching up with friends I haven’t seen since our wedding and generally thinking about what to blog about next.</p>
<p>Sifting through my mum’s handwritten recipes, clippings and annotations on pudding recipes, I once again became a tubby eight year old. Making Indian sweets like white chocolate <em>penda</em>, butterfly <em>burfi</em> (milk fudge with almond ‘butterfly wings’ like the buns we used to make at school) with mum was what made me so passionate about playing with food. She fuelled my curiosity for learning about how flavours really work and our shared enthusiasm for putting an Indian spin on everything. It is something I try to practice every single day.</p>
<p>We’d always make enough to feed the five thousand so quite often, the puddings would be taken to our temple for <em>prashad</em> – food which has been offered to the gods. Once it has been ‘blessed’ the food can be shared.</p>
<p>Unashamedly, this was my favourite bit.</p>
<p>Sampling the <em>prashad</em> brought to the temple by all the different families was something new and adventurous for me. One family would always bring <em>kheer</em> – an Indian rice pudding. It was packed with saffron, cardamom and nuts. Plus, in my eight year-old mind it had to be good… It’d been blessed by GOD! I. Was. Hooked.</p>
<p>The next time there was an event at the temple, I was there faster than a buttered bullet.</p>

<p>Anyone who knows me will be aware of my infatuation with Raymond Blanc. Every time I see him create a French classic on my TV screen, I melt. A simple recipe prepared with hunger and respect for ingredients is something that inspires me to my very bones. So when I saw him make his mother’s recipe for<em> Riz au Lait</em>, I had to try it. He suggested serving it warm, or cold with a brûlée top. Bloody brilliant.</p>
<p>Of course, I had to put my own spin on it so taking my inspiration from childhood experiments and that ‘holy rice pudding at the temple’, I created this Saffron Rice Pudding with Banana Brûlée.</p>

<p><span style="font-size: 18px;">Saffron Rice Pudding with Banana Brûlée</span><br />
Adapted from <a href="http://www.raymondblanc.com/recipes/riz-au-lait/" target="_blank" rel="noopener noreferrer">Raymond Blanc’s Riz au Lait</a><br />
Serves 6-8</p>
<p><strong>Ingredients</strong><br />
1.2L semi-skimmed milk<br />
500ml double cream<br />
½ tsp saffron<br />
150g rice<br />
100g caster sugar<br />
4 bananas<br />
Extra caster sugar for caramelising the pudding tops</p>
<p><strong>Method</strong></p>
<p>1. Pour the milk and cream in a large pan, then add the sugar, rice and saffron. Bring to the boil and turn the heat down to low. Simmer for 40 minutes. The rice should be pretty much cooked all the way through. Don’t worry that there’s lots of extra liquid – it will all come together.</p>
<p>2. Pre-heat the oven to 190C</p>
<p>3. Next, take individual ramekins placed on a tray or one large ovenproof dish and ladle in the rice pudding. Bake in the hot oven for 20 minutes or until nicely browned on top. If it gets too brown, cover with some foil. Remove from the oven.</p>
<p>4. Slice the bananas and top the rice pudding. Sprinkle over a liberal amount of sugar and place under a hot grill until dark and the colour of burnt caramel. If you have a blowtorch you can use that. I do have one but it’s new and if I’m honest, I’m a bit scared of it.</p>
<p>Allow to cool for at least 15 minutes before serving because burnt tongues are nobody’s favourite.</p>

<p class="MsoNormal" style="tab-stops:60.0pt">In fact, I love Lotte&rsquo;s buttery cinnamon roll recipe so much, I used it as the basis for my Indian-inspired wreath here.</p>
<p class="MsoNormal">The basic white dough is rolled with a shameless amount of butter, ground cardamom and cinnamon, twisted into a Finnish bakery-style wreath and placed in a hot oven. Once baked, I couldn&rsquo;t help but drizzle it with icing made with rose syrup (the kind I use to make my Strawberry Cheesecake Falooda), and then scattered with homemade candied lemon peel and pistachios. Need I say more?</p>

<p class="MsoNormal">Okay, let me explain the beauty of these flavours together&hellip;</p>
<p class="MsoNormal">The spicy cardamom and cinnamon combined with sugar and butter create the most amazing, rich flavour once baked inside the dough. The fluffy bread mops up the buttery juices and almost caramelises the bottom of the wreath. The exposed layers on top create little craters where the caramelised butter collects, making it golden and crusty. A drizzle of rose icing gives it just enough sweetness and perfume to define it as a Bollywood-themed party in your mouth. Oh, and who doesn&rsquo;t love candied lemon peel?</p>
<h2><u>Cardamom Wreath with Rose Drizzle and Candied Lemon Peel</u></h2>
<p><strong>Ingredients</strong></p>
<p class="MsoNormal"><strong>For the dough:</strong></p>
<p class="MsoNormal">450g strong white bread flour<br />
2 tsp sugar<br />
2 tsp dried yeast<br />
275ml lukewarm water<br />
2 tsp groundnut oil</p>
<p class="MsoNormal"><strong>For the filling:</strong></p>
<p class="MsoNormal">100g light brown sugar<br />
200g very soft salted butter<br />
1 tbsp ground cinnamon<br />
1 tsp ground cardamom</p>
<p class="MsoNormal"><strong>For the rose icing:</strong></p>
<p class="MsoNormal">70g icing sugar<br />
2 tbsp rose syrup</p>
<p class="MsoNormal"><strong>For the candied lemon peel:</strong></p>
<p class="MsoNormal">1 lemon<br />
400ml water<br />
5 tbsp sugar, plus more for coating</p>
<p class="MsoNormal"><strong>To decorate:</strong></p>
<p class="MsoNormal">20g pistachios, husks removed</p>
<p class="MsoNormal"><strong>Method</strong></p>
<p class="MsoNormal">1. Combine the ingredients for the dough in a large bowl and bring together using your hands. Knead for 10 minutes. Grease the bowl with a tiny bit of oil and cover with a damp cloth. Leave to rise in a warm place for 90 minutes.</p>
<p class="MsoNormal">2. Meanwhile, make the filling. Mix together the ground cardamom, cinnamon and sugar.</p>
<p class="MsoNormal">3. Next, make the candied lemon peel. Peel the lemons using a vegetable peeler and hold a sharp knife against the underside, slicing off as much white pith as you can. Discard the pith and slice the lemon zest into thin strips. Heat the water and 5 tbsp sugar in a small saucepan and bring to a simmer. Add the lemon zest and boil for 7 minutes. Drain and toss in a bowl of sugar. Remove from the sugar and allow to dry on a plate. Set aside.</p>
<p class="MsoNormal">4. To make the icing, combine the icing sugar and rose syrup, beating well to ensure there are no lumps.</p>
<p class="MsoNormal">5. Heat the oven to 180C and line a large tray with baking paper.</p>
<p class="MsoNormal">6. Once the dough has risen, knock it back and give it a good knead to remove all the air bubbles. This will ensure an even rise in the oven, maintaining the shape of the wreath.</p>

<p class="MsoNormal">7. On a floured surface, roll the dough into a large rectangle until it&rsquo;s about 1cm in thickness. Spread the very soft butter all over the surface and then sprinkle all over with the sugar and spice mixture. From the longest side, roll the dough into a log shape. Split the log into two pieces lengthways (I find the easiest way to do this is using a pizza cutter &ndash; this avoids any snagging). Press the tops into each other and place one strip over the other, keeping the layers on top. Repeat until you&rsquo;ve completed the whole log. Bring the ends together and twist to form a wreath. Brush with a little bit more butter and place on a lined baking tray.</p>
<p class="MsoNormal">8. Bake in the middle of the oven for 25 minutes. Once baked, you&rsquo;ll notice quite a bit of butter in the tray. Use a pastry brush to baste this all over the wreath.</p>
<p class="MsoNormal">9. Remove from the oven and allow to cool for 15 minutes before drizzling with rose icing and sprinkling with candied lemon peel. Scatter with pistachios and finally dust with a little bit of icing sugar.</p>
<p class="MsoNormal">10. Serve with Cardamom Chai or Masala Coffee.</p>
